Szechuan Pepper Chicken Gizzards
Chicken Gizzards (giblets) are full of protein and very low in saturated fat and fat. They are also high in iron and zinc, but they are also high in cholesterol. There are many ways to cook gizzards. This version is tasty with rice or as a standalone snack, excellent with a cold beer. It's crunchy and chewy as texture, quite fragrant with all the aromatics and the spiciness of the Szechuan peppercorns add the perfect tingle.

1 tsp Szechuan peppercorns
1 tsp kosher salt
1 to 2 lb chicken gizzards
green onion strips/ginger slices/splash of cooking wine (blanching gizzards)
1 tbsp oil
2 green onions cut into strips
small knob (about 1 to 2 inches) of ginger cut into strips
1 tbsp of minced garlic
1 tbsp of soy sauce
1 tsp of chicken powder
1 tsp of oyster sauce
1 tsp of Szechuan pepper salt
2 red chili pepper chopped (optional)
cilantro (garnish)
extra Szechuan pepper for dipping
