✅ Ingredients:
• chicken stomachs - 35 oz | 1 kg
• garlic - ½ oz | 15 g
• 1 red hot pepper
• 1 green hot pepper
• chopped ginger - 1 tbsp
• salt - 1 tbsp
• oyster sauce - 2 tbsp
• soy sauce - 2 fl oz | 50 ml
• scallion - 4 stems
• vegetable oil - 2 tbsp
• water - 8 cup | 2L
✔︎ You will need:
• pan or wok
• stockpot
• carving board
• colander
📙Preparation:
1. Cut the cleaned and washed chicken stomachs into halves and snick each halve into thin slices. Cut the hot peppers into rings and mince the garlic and ginger.
2. Lay out the chicken stomachs into a stockpot and pour with 8 cup | 2L of water, bring to a boil, skim the froth, salt and boil until readiness for an hour over low heat.
3. Drain through a colander when cooked.
4. Heat a pan or wok over high heat, add the vegetable oil and fry the minced garlic for 30 seconds over high heat.
5. Add the chopped ginger and keep frying over high heat for another 30 seconds stirring constantly.
6. Add the chicken stomachs and hot pepper and fry for a minute over high heat stirring constantly.
7. Add then the oyster and soy sauces, coarsely cut scallion and fry for 30 seconds more.
8. Serve your Chinese-style chicken stomachs as a hot main dish or appetizer.
