Spiced coffee cheesecake kunafa- no bake
Just imagine a layer of toasted and crispy “kunafa” topped with spiced coffee cream and on top of that a layer of candied almonds and dates.
For the kunafa layer:
200 g Kunafa /Kataifi dough (2 and 2/3 cups after being chopped)
85 g butter (6 tablespoons)
1 tablespoon powdered sugar
1/4 teaspoon salt
3-4 tablespoons honey or thick simple syrup
For the cream layer:
5 large dates (100 g without seeds/pits)
3 teaspoon instant espresso powder
2 teaspoons ground cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/2 cup hot water
200 g cream cheese at room temperature (1 & 2/3 cup)
1 can of nestle table cream (225ml)
1 cup heavy whipped cream -cold
4 tablespoon powdered sugar
For the candied layer of almonds and dates:
1/4 cup brown sugar
1/4 cup white sugar
2 tablespoon water
1/2 teaspoon salt
1/2 cup sliced almonds
4 pieces of dates cut into small pieces
