Bulgur bowl with zucchini & minced beef
This is an ultimate recipe for Ramadan suhoor that will make you feel full for the whole day. It can also work as a quick Iftar recipe.

2 tablespoons olive oil
1 small onion, finely chopped
250 g diced zucchini (about 1 & 1/2 cup)
250 g cooked minced beef
1 cup coarse bulgur
1 & 1/2 cup chicken or vegetable stock (could substituted for water)
Salt & pepper to taste
1/2 cup chopped cilantro
1/2 cup yogurt
1/2 key lime
1/2 tsp dried mint
