    Boiled peanuts are a fairly unique snack, but as someone who grew up with them, they are so good. Also For a simple sausage gravy from the south, just fry a pound of ground pork (other ground meat may work) sausage in a skillet, once browned turn down heat and add flour and brown the flour on medium low heat, then add milk and simmer until desired consistency. Salt and pepper to taste once done.

    Sausage gravy or fried chicken gravy made with milk and the browned flour left in the pan you fried the chicken in, are the absolute best.

    A lot of Black Americans have their roots in the South, so even if they’re not born and raised there (like me, I’m from NYC) many of us still learn to cook this food because we grew up on it. Making my grandparents’ recipes keeps their memories alive to me 💜 Also you can usually get some tasty frog legs at Coney Island in Brooklyn.

    If you make that chicken gizzard curry at a southern tailgate, especially LSU, a lot of people will really want to try it. Based on the taste in food you described in the video, Louisiana should be at the top of your list to visit.

    I live in Tennessee and the ones missed are banana pudding (from scratch), chess pie and peach cobbler as for savory fried pork tenderloins, chicken ala king poured over fresh baked cornbread with jellied cranberry sauce, baked beans southern style.

    To answer your question about why certain foods were even thought of to eat -- Many foods in the South came to be from people simply "living off the land" and using what they found around them when they were poor or times were tough. And, once they did that, and they liked the food that came from that, the dishes/recipes stayed around and became "normal".

    If you're coming for the food, New Orleans is a MUST!!!!!!!!!!! Every August I buy 60 lbs. of green (fresh and raw) peanuts, boil them and put them in single servings in my freezer. Can't have football season without boiled peanuts! Also, if you want crawfish, again, you must go to Louisiana around Easter when the prices drop and they are very plentiful!!! Hope to have some in a couple of weeks myself! Our (my family) Pimento and Cheese has cooked bacon added as well as a little very finely chopped onion. It's great by itself, as a dip, made into a grilled cheese or topping a hamburger! I have even put it on a hot dog and it was delicious!

    But the problem is that you guys just go to Florida New York or California go to mid states don’t just go to the hype the cities are ok but small towns better I mean you have to see the sights but you get me

    100%. So many people only go to like a couple of cities in those states and claim they've seen the US. You need to be deep in the woods of a few states before you make that judgment. New York, Los Angeles, and Orlando don't share anything that I share culturally

    I love living in Houston, TX. We get the Cajun & Creole food from Louisiana as well as great Texas BBQ. We are right on the Gulf Coast so we have access to great Seafood. Also, there is a Huge Asian population here so we have access to great Chinese, Korean, Vietnamese, etc... food!

    If you like chicken wings then the most famous hot sauce for "buffalo sauce" is a mixture of Frank's Red Hot and melted butter. Frank's is a simple sauce you could probably "make easily at home" if you can't get it elsewhere. The spicy, vinegary hot sauce on the wings then dipped in a blue cheese dressing is an amazing pairing. I finally perfected my wings by smoking them on the grill at a 250F until the wings are 180F, pull them off to cool a bit then fry them in 350F oil for 3-4 minutes. The cooling allows the moisture in the skin to escape and the frying cooks it off and makes an extra crispy crunchy skin. Thanks for sharing.

    You mentioned frog gigging. Check out "noodling." It's a way to catch giant catfish by sticking your hand into a breeding hole, letting the fish bite you, and bringing it to the surface. It is pretty dangerous because sometimes the hole they choose belongs to a snapping turtle, so you will often find noodlers missing fingers. Also when near a place like a dam, the catfish can get 150-200 pounds in weight. So when the persons dives, they might not come up again. It's a real thing in the USA

    New Orleanian here. Yes, jambalaya is similar to a paella. Real Cajun jambalaya and gumbos just take any meat, seafood and even leftovers and throw them in the pot, you have different kind of roux you can make and the andouille sausage is a must in either, but you can be as creative as you want.

    Paella and jambalaya are both rice dishes, but they have different origins, ingredients, and cooking methods. Paella is of Spanish origin and jambalaya is a Louisiana Creole dish from the US.

    .. and where do you think the Louisiana Creole got the recipe from? Louisiana was also a Spanish colony and New Orleans received large waves of black residents from Spanish colonies in the Caribbean, especially Cuba.

    We typically fry catfish breaded with a combination of cornmeal and flour… makes HUGE a difference when frying catfish…. Im from California but my grandparents on both sides were from the deep south and taught me how to cook tons of southern dishes

    Bread Pudding is Fantastic!!! It's great after eating several lbs of spicy Crawfish!! If you're really into food New Orleans is a must when visiting the South. Another great food location is Texas,we have the BBQed Brisket along with Cajun/Creole and TexMex and Mexican food. Being right next door to Louisiana and Mexico means you get the best of both worlds. Not to mention seafood. Biltong is pretty much the same as our beef jerky from what I can tell. Seasoned strips of beef dried under very low heat. And yeah it goes great with beer.

    The biscuits and gravy they showed on there was a mess. It should not look like vomit and you sure as hell don't put American cheese slices on the biscuit. Yuck. Plus you can make the gravy from not just crumbled breakfast sausage, but most any breakfast meat pan drippings like bacon, ham, pork chops, etc...

    It's nice to see a reaction to foods being open minded. So often people turn their noses up at anything different from what they're used to. There are a few things I really dislike, but I always try to approach any new food positively, not automatically disliking it, without even tasting it! There have been times when I've been blown away by a food that sounded bad, but turned out to taste amazing!

    Chow-Chow is the epitome of any condiment. My wife is mexican and her favorite topping for beans, biscuits, and sausage is Chow-chow now.

    You need RAW green peanuts to make boiled peanuts, not easy to find. I make one type Cajun style (boiled with spicy Louisiana Cajun spices) and another type garlic.

    Here’s two southern dishes that wasn’t mentioned in the video but are a must try. First is the famous Natchitoches Meat Pie, which is a deep fried pie that’s filled with cajun seasoned ground beef, chicken, pork, or crawfish. The best place to get them is at their namesake city in Louisiana. Second is the cheese dip. Mostly popular in Arkansas, the cheese dip contains velveeta cheese, diced tomatoes and chili peppers. Some people even add ground beef to the dip. In the capital city of Little Rock, an annual cheese dip competition takes place every year.

    I live in Tn, but from Louisiana and my family still lives there. A friend and I from Louisiana do a crawfish boil every year in March or April. You are welcome here! He and I will cook about 300 pounds of fresh crawfish with potatoes and corn. It’s an amazing time and you can just show up!

    Traditional southern food was (and sometimes still is) made from what you could grow, gather, or catch. So, lots of different animals, depending on what you could find in the woods and streams.

    Turtle soup is AMAZING! If you want to experience a crayfish boil be sure to come in the right season. Usually mid-January to early July with peak months March, April and May. Rain fall and water levels in the bayous will affect the quantity and season length.

    Homemade pimento cheese is awesome! Especially,on crackers or on a sandwich.Im from Texas. Here we have something somewhat similar to beignets called sopapillas. Beignets are a little breadier.Sopapillas are hollow in the middle.When they are nice and hot, we open the middle up and put honey in them. Some people like Carmel sauce but I prefer honey.

    Southern biscuits are nearly a religion in the American South. Every southern girl/woman takes pride in being able to make these wonderful fluffy foundations to any southern meal. It's the interior fluffiness that identifies a proper southern biscuit. Badly-made, a biscuit is hard, heavy; some consider a bad biscuit to be useful only as a doorstop or describe it as a hockey puck. Well-made, it is light, delicious, and very absorbent to butter, gravy, savory juices (whether meat or vegetable juices), and fruit or cream toppings. Those unfamiliar with American biscuits (which are savory) misidentify them as a type of scone, but scones are hard and dry. And while specialized American biscuits can be made with added ingredients (like bacon or cheese) or herbs (like rosemary or basil), they are still primarily a savory preparation. American biscuits can be eaten as is, but usually they are partnered with other foods or flavors. They can be cut open like a roll to lay in any combination of sliced meats, cheese, bacon, fried egg, or fried fish. They can be cut open like a bagel and laid on a plate or saucer to spread butter or fruit jams/jellies/preserves or as a bed for sausage gravy or other meat gravies. Many people just use biscuit halves as a sop, to soak up gravies and juices and the broken runny yolks of fried eggs. Sometimes they are halved, filled with a sugared fruit compote (sliced strawberries or peaches, lots of sugar, sometimes some alcohol added), and topped with sweetened whipped cream. ______________________________________________________________________________________________ Here's a recipe for drop biscuits, if you want to get a preview of what you may find in the US: 1 3/4 cups flour (white, all-purpose, or whole wheat) 1 Tbsp baking powder (NOT baking soda) 1/2 tsp salt 4-6 Tbsp butter, frozen 1 cup milk, cold Freeze the butter solid. Dice into small bits, then return to freezer or refrigerator. I cannot stress enough how important it is for the butter to remain cold until time to put the biscuits in the over to cook. If the butter warms and melts before then, your biscuits' texture will suffer. Preheat oven at 450°F (230°C). Prepare the baking sheet or pan (any flat bakeware: cookie sheet, cake pan, cast iron frying pan, uncovered dutch oven, etc). Preparation of the bakeware surface can be a layer of parchment/silpat or merely greasing the surface (some folks also dust the greased surface with flour); this allows for easy separation after the biscuits are baked. Measure and stir together thoroughly the dry ingredients into a large bowl. Using a pastry cutter or a table fork, work the butter into the dry ingredients until it has the texture of brown sugar: coarse and crumbly. During this cutting process, if the butter appears to be softening, return to freezer to firm it up before continuing to work it together. Slowly add in the milk. To clarify: don't dump the milk all at once, but don't take too long to mix it in. Again, if you overwork the batter, the texture will suffer. This isn't bread, so you're not developing the gluten; the moment the milk is introduced, the baking powder (which provides the air that makes biscuits fluffy and soft) begins to react. You want the dry ingredients mixed together with the milk, but not take so long that your baking powder is all used up. Use a large spoon or ladle to drop batter onto the bakeware (with or without separation between each 'dropped' biscuit); they should sit tall on the bakeware, not flat. The outside will become crisp and crusty, so you want as much volume inside as possible, to increase fluffiness. Bake in oven for 12-15 minutes, or until the biscuit tops are golden but not brown. Let partially cool, and use. (Suggest slicing horizontally and buttering interior surface of both top and bottom.)

    I’ve lived in Texas all my life. We have southern, barbecue and my very fav TexMex. Our culture is so diverse we have many many different foods. FYI bread pudding is AWESOME!!! Soo good. Right up there with Pecan Pie!

    A lot of southern American are asked on West American, Spanish, French, and Ative American culture. In Louisiana, it's called Cajun/Creole food.

    There's a secret to eliminate the gas caused by dry beans. 1. I never soak my beans before cooking I wash them well and cook in a crock pot make sure to have plenty of water, cook on high for approximately 8 hours. Once done season salt garlic then add s small amount of baking soda you will see it starts to foam no more gas problems. I also put a pinch when I make sweet tea. Boil the water add your tea bag then the baking soda, it will make the tea bag puff up and will prevent the tea from being cloudy. Add the sugar while the water is hot then add cold water. Enjoy

    I would totally recommend going to a crawfish boil. Be aware though that while crawfish is usually available in East Texas and Louisiana, the season for actually having a boil runs from early spring until early to mid summer. You definitely want the family experience rather than the restaurant one.

    For Easter breakfast at our church my husband made 2 gallons of sausage gravy (for biscuits and gravy) and there was none left afterwards. Forget and the sweet potato casserole (too sickly sweet and gummy with marshmallows) and go straight for the Sweet Potato Pie which looks like pumpkin pie, but tastes sooooo much better with or without whipped cream..

    When I lived in New Orleans, there was a restaurant in Jefferson Parish just outside the city that served Turtle soup for lunch on Wednesdays Pimento cheese is shredded cheddar cheese (I prefer sharp, the sharper the better), diced pimento peppers, Mayo. My grandfather liked to add a bit of powdered garlic, salt, pepper, smoked paprika, a little pepper flakes, & a dash or two or three of hot sauce ( he liked Texas Pete. It’s a vinegar & cayenne based sauce) No real recipe. It was all to taste He’d shred a whole block of extra sharp cheddar cheese (about 8 oz), dice up 1 pimento pepper or use 2 tablespoons of jarred pimentos, just enough Mayo to coat everything & get it the right consistency for spreading & then mix in all the spices which were added to taste

    One of the things I like to do when I travel is to sign up for a cooking class. A lot of these dishes are from New Orleans and I would recommend the New Orleans Cooking School. It’s been a few years since I was there but I can’t imagine they’ve changed much.

    You call yours "biltong". In the South we call it "country ham". Salted, spiced, and cured pork. I was taught how and I cure my own beef, pork, venison, even fish. If you want to try boiling your own peanuts, this is how I do it. I'm lazy, so it's the easiest way I've found. Set the peanuts on a good simmer and go watch the game. DO NOT ADD SALT YET!! When you go for a beer, make sure the water hasn't boiled away. (if you salt 1st, 2 things happen:1] the brine + peanut juice will foam up and boil over if you're not right there 2] the salt draws out the natural juice and toughens them) After about an hour begin tasting one occasionally until they get tender. When they are as done (soft) as you want them, add your salt, cook and stir for 5 minutes. 2 ways: 1] make the water as salty as you want your peanuts, then turn off the heat and let them cool completely, 2] salt the hell out of the water, then taste occasionally. When they absorb the salt to your liking pour off the water or they will keep taking salt. i like #2 because I get to eat them fresh and warm!!

    Boiled peanuts are great especially the spicy cajun, though idk what she meant by "being impossible to crack with your fingers." They're super easy to shell with your hands.

    Fried frog's legs are great tasting, while i was making some for my friends...I turned from the stove to enjoy some. But to my shock, they were all gone...so much for friends

    My former in-laws lived next to pond with large frogs. Sometime we would have frog legs for dinner. Quite tasty.

    Red eye gravy isn’t just coffee and ham or pork drippings. Real red eye is made with a small amount of red wine to de glaze your pan, and add flavor. And is needed to actually make red eye while different flavor, along with being authentic as that’s how it was first made.

    This isn’t a traditional recipe so many other southerners will not like me saying this but the best and easiest way to make peach cobbler is to just get 2 big cans of peaches and drain one then pour them all into a pan, sprinkle them with cinnamon then pour a whole package of butter pecan cake mix on top and top that with 2 sticks of butter cut into tablespoon pats and place them all over the top of the cake mix. Bake at 4000° for about 40 minutes or so! It’s amazing

    Since you were asking about it, a few good food reactions you might enjoy are: the state dish/food (every state has a recognized dish), the best hamburger in every state, fair or state fair foods, and possibly the different types of bar-b-que (there are several different types in the South), and maybe the differences between Canjun and Creole foods. There are lots of different seafood videos as well, including the boils you are talking about, and some seafood videos in the Northeast states, California, and Hawaii. There are lots of options available for you to react to and research if you choose.

    Boiled Peanuts are a comfort snack if you're from the areas that serve them. You can find them on the roadside, at fairs, flea markets, carnivals, gas stations, etc. If you grew up eating them you just crave them all the time. They're very healthy too as long as your sodium levels are stable. Martha Stewart making Chicken and Dumplings was as bad as showing Gordon too. Doesn't even use dumplings.

    The biscuits and gravy does not have enough gravy. The lumps you see are crumbled sausage. Also the gravy is white to off-white because it's made with milk. Eating fried chicken and waffles that are made right will make you bang your head on the table as punishment for eating something so good that you did not deserve. The guy who put hot sauce on the chicken and waffles is Bobby Flay. He's one of those celebrity chefs who can't leave well enough alone. Kind of like Gordon Ramsey who makes Spaghetti Carbonara with cream, Bolognese sauce with Worcestershire sauce, and puts olive oil into his pasta water. Another legend in his own mind. A lot of Southern food arose because that's what lives down there. We don't have alligators in the north. A lot of it came about during slavery when the slaves were given the unwanted parts of butchered animals to make do with. Most regions of the States have food unique to the area because, like the South, that's what grows and lives there. Mix in the different countries of origin and you can have one item being cooked in different ways depending on where you're at.

    Yes syrup and hot sauce. The combos of several things with sweet are BIG here sweet & salty (chocolate covered pretzels) sweet & savory (candied bacon) sweet & spicy (sweet & spicy protein - your example from chicken & waffles) You can buy chili pepper chocolate at some markets

    They left out Polk Salad, like in the song Polk Salad Annie. I never ate, it but my mother cooked it quite a bit when we lived on the farm in rural North Georgia. It's actually a weed that most often grows along fence rows and on vacant lots. Us kids would strip young and tender leaves from young plants and bring them home to Mom. Pokeweed is poisonous to humans, dogs, and livestock if not handled properly. The leaves must be cooked by boiling three times with the water drained and replaced each time to get rid of the toxins. It is said to taste similar to spinach. To quote an article on BBC Travel: 'As soon as he said the words - poke salad - a stream of memories flooded my brain: how my mother and aunts would pull the car over on a country road to pick a good patch of poke salad, also called pokeweed; the quick and precise way they snapped the leaves from their stalks; the smell of my great-grandmother preparing the bounty in her kitchen, finishing the dish with bacon grease scooped from an old Crisco can she kept on the stove." My Mother also seasonjed the greens with bacon grease she kept on a metal pitcher on the stove.

    I'm from San Antonio and sadly Lulu's is no longer open 😢. They use to have a food challenge where if you ate the 21 oz Chicken Fried Steak you got your meal for free and a 3 lb cinnamon roll

    You should go to New Orleans... such a wide variety of southern foods all in one lovely city. If you end up trying to make pimento cheese, add jalapenos, fresh, not pickled. And you just eat it on bread as a sandwich spread or be really southern and put it on a biscuit. You can also add jalapenos (fresh or pickled) to cornbread and its amazing

    Like my parents, I was born/raised and have lived all my life along the Pacific Coast in California. Therefore a lot of the southern foods in this and other videos simply haven't been a part of my life. And, frankly, I'm not sure you could pay me enough to sit down to a full dinner of chitlins. In truth, tho, there's delicious food everywhere in this country. That's mostly because we have people from literally everywhere on Earth, and most have brought their food traditions with them. . Where I'm from, there's a powerful presence of Mexican food, 𝗼𝗳 𝗰𝗼𝘂𝗿𝘀𝗲, and other Hispanic foods (Latin American, Spanish), and East Asian/Oceanian influences (Japanese, Chinese, Korean, Filipino, Vietnamese, Thai, Hawaiian.) The California food truck culture offers crazy amounts/varieties of freshly prepared foods daily, and the well-known trucks are mobbed as soon as they turn the engines off. Every small-to-medium-sized town has at least a couple of trucks, and many show up at the farmer's markets we have almost year-round (in some places, like where I live).😉

    To prevent your pot of beans from being gassy, add a cup of 7Up soda during the last half hour of cooking. There are 7 different types of meat in a turtle. Most people just eat the frog legs. Just ask yourself, who was the first person who thought eating an oyster was a good idea.

    Boiled peanuts are the best. You can’t really make them good enough at home. They are best when you are in the middle of nowhere and someone has a mobile stand just set up some random place. And these collard greens are making my mouth water.

    According to on line info, Lulu's Cafe' closed during Covid and is no more. However, the huge sticky buns are still made and sold by her son in another part of San Antonio. I will be in San Antonio again for Thanksgiving and wanted to try Lulu's but I'll have to find another amazing place to sample.

    As far as frogs & turtles are considered, think a mix between dark meat chicken and white fish. The texture is bouncier (which seems appropriate) in frogs and turtle tends to fall apart more into shreds and be WORLD'S heavier with gelatin. (Essentially, you know how good chicken stock will go a bit jelly like after cooling in the fridge? Turtle stock can practically be sliced and the meat feels a bit fattier) As for how it came about? Same as every other food. Someone got hungry, saw other critters eating something and not die, gave it a go. We tend to look at things like frogs and wonder how anyone came up with eating it - but think of it like this.... the frog kinda makes sense. EGGS and MILK are kinda the surreal "just how the hell...." items. Something kills something, eats it, seems like it might be worth trying. Even dairy ~kinda~ makes sense. Mammals make and drink milk, I suppose you can see the thought process. But eggs come from a direction that, if you are just glancing at them when it happens could very well be excused if someone thought it was just a hard poop. So someone saw that and figured "let me pop that into my mouth". Gives me a bit of the jimjams to think what unfortunate OTHER things they tried before they got to working out what eggs were and that they were edible.

    I live in Cape Coral Florida and there was a restaurant 5 minutes away from my home that made the best crab nachos. Unfortunately due to Hurricane Ian, which has absolutely devastated my city, that restaurant is now underwater. Hope you get the opportunity to enjoy lots of fresh seafood while you're here.     If you do come to the states, my must visit southern culinary destinations are New Orleans, and Charleston (South Carolina). I'll also note my palate is somewhat similar to yours: imo ambrosia is disgusting, as is sweet potato casserole (though I love beans, but it's mostly a matter of eating them enough that your digestion adapts to then -- a process that takes a good while).

    Man.. a real good sweet potato casserole will blow your mind. The combination of flavors and spices is intense and absolutely delicious! I have no real liking of sweet potatoes. But I had a real good homemade sweet potato casserole once and it was something I'll never forget how good it was. It's way more then just a sweet treat.. it is sweet.. but the flavors go way deeper than just sweetness.

    As an outdoorsman, you would Love Maine. Its very cold in the winter, so dont go then lol. World class lobster and seafood. Amazing (virtually) untouched woodlands, with tons of rich woodlands, lakes, streams, and ocean. Obviously you have to check out the South for BBQ and culture. I highly recommend getting out to the country for a real authentic experience, and shoot some guns while you're here!
