Smoked Chicken Wings Recipe and How to on a Pellet Grill.

We get pretty excited when the weather gets a couple of degrees above 0 here on the prairies, especially with Covid restrictions going on. It just allows us to have a few friends over to hang out around a campfire and enjoy some food together.
One of the easiest recipes and easily one of the most delicious is baked chicken wings on the smoker.
I’ll show you how you can make wings like this with almost no effort. Let’s do this.

Before we get started, I would like to encourage you to leave your comments below after trying this recipe, and if there are any tips that I may have missed or that would make these wings better, feel free to leave those as well.
First off, make sure your wings are at room temperature and that you’ve taken all the blood and whatever else off them with a paper towel.
I like my wings breaded, but tonight, we are having some people over who have diet restrictions, so chicken wings are really great because we can cook different types of wings on the same cookie sheet and make everyone happy without needing 2 ovens.
After cleaning the wings coat them lightly in olive oil, this will allow the breaded mixture that you use to stick to the wings.
I like to use one of the following for my breading...panko crumbs or just generic shake and bake from the grocery store.
Put your breaded coating in a bag and start dropping wings into the bag and shaking them up. A tip here...you can add a bit of your favourite rub into the breading for some extra flavour.
Preheat your smoker to 375 degrees
Arrange the chicken on cookie sheets lined with foil or parchment paper. Important tip. Pam the crap out of the surface, as these are going to stick to whatever you cook them on.
Make sure you leave some wings non-breaded with maybe just a rub on them for your guests that have food restrictions.
After your wings are coated and the grill is preheated, put them on the grill and cook the wings for about 35 minutes turning them at about 20 minutes.
The temperature if you like to check them should be at least 165 degrees. 175 will yield a better texture.
Once the wings are off the grill, transfer them to a bowl and toss in your favourite sauce. Make sure you put enough in. Some of the sauces we like are Frank’s Red Hot Buffalo Wing Mix, and Sweet Baby Rays BBQ sauce. This part is completely up to you. We have even done some buttermilk dill sauce, and some honey mustard homemade sauces and they all work. If you want it easy, just run to the grocery store and pick up what you think would taste great on them.
You will love these wings, they are so fat and juicy and the sauce sticks so well to them.
