I have the same smoker and i smoked for about three hours only to find the cheese had melted!! whats the best way to regulate temp?

It's happened to me two a couple of times. I make sure the wood dust in the smoke generator is patted down and not touching the inner side at the top so I cannot all burn at once. I also make sure the smoker is out of direct sunlight, I found in the sun it gets too hot and I melted cheese that way. Apart from that I haven't done much else. I hope that helps

How long does the dust last per smoke,and can you use the smoker with pellets?

I would say roughly 7-8hours and never used pellets so unsure.

does this make an obvious stream of smoke? I live in the south of france where bbqs/open fires are not allowed due to forest fire risk. I know this will make some smoke but is it subtle that the neighbours wont be reporting me

There is some smoke but I would say its subtle compared to using a bbq and hot smoking meat.
