I think so. It takes only 10~20 minutes to keep them sharp anyway.

I like that this guy doesn't waste food and doesn't keep cutting and cutting edges of the sea food.
This was fascinating. As someone with a very limited knowledge of seafood, it would have been useful to have the names of each item as it was being so professionally prepared. Such skill!

Not sure what the fish is, but I'd guess maybe a sanddab. After the fish in order, the rocky looking ones are oysters. The ones with regular ridges are scallops. Next the big ones look to be mussels. The orange spiky things are apparently called sea pineapples. The smoother looking rocks he cuts up the meat of I think are abalone. The last couple look to be types of sea cucumber. In the tray he puts on the burner are clams, two types of scallops, mussels, and oysters. I could be wrong on any of these, but I hope this helps!

If it was a few years ago, there will be vegetarian and vegans coming to say this but I think they eventually learn that just leave what they don't like right there and live on with their own business lol. I'm a veteran for that war.

I was just directed here from a video where a stingray was skinned and filleted alive before being killed. It was hard to watch and a lot of people assume that's what's happening with live sashimi - especially because the tissues have a tendency to continue moving long after being killed. Thank you for demonstrating that live sashimi can be done HUMANELY - it is clear you have a sense of respect for the animal you are preparing for consumption. It's such a beautiful skill to watch when done humanely and well as it is here. I am constantly in awe of the technique. Seeing the fish go from the ocean to the plate gives me a real sense of gratitude. Thank you for your respect for marine life and for sharing this art with us.
