    Never eaten artichokes raw. I live only a few hours from a big artichoke growing area and in season we can get the small ones so I will have to try. Your composed salad looks quite good.

    The first time I had Salad Nicoise we were in the Saint Thomas in a restaurant in the Ritz Carlton. It was the best salad I had ever eaten and the best snorkeling- in one day. I have tried to make it many times but never as well as they did in that restaurant.

    My favorite salad is a Salade Bourginion with croutons and lardons. Got to know it in a little restaurant in Macon, called Le Lamartine, and it is to this day my most favorite _salade_ :)

    Anchovies, yet no tuna? Your recipe also has some other rather unusual alternative ingredients but still looks very nice. I first ate Salade Nicoise while visiting Nice in 1995 and I still make it myself to this day!

    Never seen a salade nicoise without lettuce. The first time I tried one was in Spain many years ago and I loved it. This looks too good to eat.

    this epoch is so sad, even the smallest effort is a mountain for many, and people always jump on the opportunity to critizise and sound smart on some puny details instead of encouraging people that are actually doing something with their life.     One of my cooking teacher who always pretends she is a French by adding French words in her talks, one day taught me how to make "Nicole Salad". Way later on, a French guest at my restaurant ordered a "Nicoise Salad", and I actually said: "You mean Nicole salad"...*face slap myself*

    +Duckman Vegetarians don't eat meat, right? But they eat fish. So fish is fish and meat is meat. One comes from fish and the other from farm animals or I guess hunted animals. Of course we could argue that fish is still meat, I see your point BUT in many scenarios, especially in cooking / what people eat, fish is considered a separate thing from meat.

    You're not all wrong. Nice is very close to Italy. Most signage in the city is in both italian and french. In fact, when Italy became a unified country, Nice voted in a referendum to become a French city instead of an Italian one.

    You know Niçoise means from Nice right? Either way it's a tasty salad. I had one the other day with a piece of slightly seared tuna steak on top, quails egg and some crunchy green beans and broad beans. It was fucking amazing

    The people of Nice scoff at Escoffier's version. If they could procure guns as easily as Americans, they would have shot both Julia child and Jacques Pepin for their versions. The "authentic" Nicoise apparently doesn't feature potatoes or bell peppers, it's just tomatoes, eggs, olives, anchovies and olive oil, sometimes maybe string beans. In my opinion, that's way too sparse.

    For those that dislike the fibrous texture of tomatoes, you can remove the very centre of it to make it a little softer on the tooth - i.e. the white part. Just place a tomato piece on a flat end and cut straight down with your knife against the very edge of the core. You can also take a little more off towards the butt (idk what this is called, just the part where the green stem comes out of!) of the tomato to get rid of that bit too. Very fibrous, awful to chew.

    My mother did that all the time with any salad. The oil in the garlic adds garlic flavour without you biting into a chunk of raw garlic. Try it. You'll love it.
