Simple and soft Ladi pav | Dinner Rolls | Single Rise Ladi pav | Eggless Ladi Pav
Ladi Pav
Ladi pav is an Indian bread which is very soft and fluffy. It is very famous in mumbai and is best had with Batata vada, Samosa, Pakoras, burji, bhaaji, kheema and many more dishes.
Ingredients
1) All-purpose flour(Maida) - 400grms(sieved)
2) Sugar - 1&1/2tsp
3) Milk - 1/2cup or 100ml
4) Water - 1&1/2cup or 300ml
5) Butter for greasing the Pav
6) Oil (refined) - 2 to 3tbsp
7) Salt - 1/2tsp
8) Instant dry yeast - 2&1/2tsp

Awesome recipe… I followed all the steps n got it well. The tuckin tip n kneading before n after salt tip are great. I don’t know why this one doesn’t have more views. One suggestion: please give measurements in grams so it’s easy for others to follow.

Baking ke time Trey konsi rack mein rakhna hai lower ki centre rack mein. Baki g ke time dono rod on rakhna chahiye ki only lower rod on.

Bake it in pre heated oven at 200°c for 20 - 25 minutes with both coils on. Keep it in middle rack.

I would not suggest to change any ingredient. Ye jo measurements hai wo aur method saara Maide ke hisabse hai

Nice recipe. So Total we have to knead the dough for 20 minutes. 10 minutes before adding salt, and 10 minutes after adding salt. Am I right. And one proving is enough. Hope to try soon. Please clear my query. thanks.

Can one get the same result if one uses whole wheat flour like chapati ka ata?

The results will vary a bit. Maida has more stretching property. If you want vidoe like results and follow the recipe to the point also make sure you keep it in warm place while rising to get best results.
Which brand of yeast and maida you have ?

Maida I have used from local shop. Blue bird yeast is good and I think easily available as well.

Yes you can but the end result might change a bit as they have different stretching capacity and gluten in it.
In some recipes milk is used instead of water, what is the difference? My ladi pavs cane out very dense (not fluffy). I did not cover during second rise after forming balls. Balls rose but developed a thick skin. I applied milk wash and put it in cold oven (which was a mistake). I felt that pavs fell in the oven. Either not covering the pavs led to this problem or cold oven? Another thing worth mentioning is that I used instant yeast instead of dry yeast but perhaps that is not an issue?

Hi, I would suggest you to follow the recipe as it is. Never make any differences specially in baking recipes. Also I have shared lot of tips which are very important. Please follow them. Also my recipe uses only single rise. Please follow all the important tips shared in the video. You will get perfect results.

The milk has to be very lightly hot. Not much hot.
Hi.... If we are using food processor then how many minutes we need to knead altogether?

I would suggest kneading by hand for best results. If you want to try in food processor then do it at very low spead and knead till you get a nice stretchability.
