INGREDIENTS:
✔️ Rice flour 100 g.
✔️ Almond flour 50 g.
✔️ Butter 60g.
✔️ Ginger 20g (peeled weight).
✔️ Lemon juice 30 g.
Bake in the oven at 170°C for 10-15 minutes.
Finished product weight 232 g.
Total per 100 grams:
Calories - 396.36 kcal.
Protein - 7.83g.
fat - 26.01 g.
Carbohydrate - 33.96 g.

Lovely! Instead of rolling it flat & cutting, I would refrigerate it in a tube/cylinder shape to cut off slices...
To save the hassle of rubbing the butter in, grate it frozen into the mix.

I thought the same thing but it isn't the same unless you overwork the dough and end up melting the butter... her way is better.

I made a double batch today to to my Mum on Sunday as part of her Mother's day gift.. I added coconut sugar instead of stevia. I added the rind of the lemons as well for extra flavour and a little Australian salt. Im thinking to soak the rice flour in the lemon juice and rind next time to see if it holds the flavour in and smooths the rice texture... just a thought! 😋 thank you for your video and recipe. Dough was easier to roll portions into small ball then squash with a fork 👍

@@sudhanarayanan2248 the video showed 1 tablespoon which is about 12.5 grams so I put 25 grams as I was making a double batch. Thanks for asking 😁 next time I will try combining the butter , sugar, ginger and lemon rind then add the flours then add lemon juice.

Try using a tablespoon of powdered honey as the sweetener it works great.

So you grate ginger without peeling, so skin is grated too? love this idea using the whole thing, always seems a waste to peel it

@Pollyangel yes, I freeze it, then grate it straight from the freezer. Easier to do. You don't notice the peel. I'm too lazy to peel it, and also always have fresh ginger and turmeric! Nice tea.

I use a lot of ginger in Asian dishes. I never peel it either. I bring it home from the grocer, slice into 1/8" slices, throw it in a ziplock bag, and freeze it. I then pull it out as needed and dice it up fine with my chef's knife.

Скажите, пожалуйста, Вы использовали целую столовую ложку стевии, как указано в рецепте? Она же горчит.. Я могу положить только около трети чайной ложки, заменяю этой порцией половину положенного обычно по рецепту сахара.

@@ineyNV У меня сахарозаменитель Sweetmeister (Свитмайстер). Ещё добавила щепотку ксантановой камеди. Делала корзиночки мелкие. Тесто форму держит прекрасно, при этом рассыпчатое, как будто на пшеничной!

@@user-ph3ls1yy9d Имбирь не моë, заменила на манго. Думаю, можно вообще не добавлять. Ксантан где-то 1 грамм. Отличное элластисное тесто. Уже три раза делала. Всегда получается!

@@guynorth3277 Errr .......... having skin conditions eg psoriasis, eczema, rash, blisters because of eating gluten or wheat is NOT neurotic you numpty. It is real, painful and distressing. Gluten intolerance is real.

Probably can for taste but some of the moisture will need to be replaced with something else. The 1g of xanthan gum mentioned in another post will probably help. My problem is the rice flour as I'm eating keto, so I think I'' experiment with a mix of coconut and almond - and the coconut will taste good with ginger too.

Please clear up the nutritional information for me - is this per cookie or the whole batch? The Carbohydrate - 33.96 g is very high for me, being on a low carb diet. This I am guessing is due mostly to the Rice Flour. Can you suggest a good alternative to the rice flour that will still maintain a good, tasty cookie?

Same here. I substituted the rice flour with coconut flour and the result wasn’t good - a chalky, claggy texture. I’m on a low carb diet, so maybe Iwill add egg and a greater ratio of almond to coconut (a large pinch of erithritol too).
Получилось очень кисло. Заменила бы сок лимона, на сок апельсина
