Sfere di Parmigiano. This Italian recipe, which originates from Naples, literally translates to “Parmesan Crispy Balls”.
A quick, simple inexpensive aperitif made with only 3 ingredients. They are super crunchy and very tasty! 😋 It also makes a great snack and I bet you can’t only eat just one !
INGREDIENTS: Makes approx. 18-22 bite size pieces
3 egg whites 🥚 (room temperature)
12 ozs. (150 g) grated Parmigiano Reggiano
1 cup of finely hopped parsley
Couple of pinches of black pepper (Optional)
Neutral oil for frying
Bread crumbs (Optional for extra exterior crispiness)
DIRECTIONS:
1) In a medium size bowl, add the egg whites, grated cheese, black pepper & parsley.
Mix well till all incorporated. Should the mixture feel sticky, add a bit more grated cheese.
2) Form bite size balls and go straight to frying OR place in the fridge for 15-20 minutes.
NOTE : FOR EXTRA CRISPINESS, roll the cheese balls in bread crumbs.
3) Fry in neutral oil (approximately 5 minutes) or until the entire cheese balls are
golden brown. For added crispiness, once golden brown- fry for an additional 1-2 mins.
Place on a dish lined with paper towel to absorb the excess oil.
And that’s all there is to it ! We weren’t kidding when we said that this recipe is
quick and easy !

Good morning my sweet Ladies! Thank you for another fabulous recipe. I am really going to make these. I told you before that my sweet little mother-in-law cam from Naples, and my father-in-law came from Palermo. So I'm always interested in these foods from that region. I never met my father-in-law because he passed away before I met my husband, but my husband sure looked like his dad! I have to watch this video again, because I can't type and watch at the same time! Ha Ha Ha Ha Ha You two are just so fantastic - I can't say it enough my dear Nancy and Franca! Love you guys and your videos!!! 💖💖💖💖💖💖 You always make my mouth water! Now I have to go into my kitchen and make something!
