No you wont taste any vinegar. Soaking for 10 mins in 50:50 vinegar water will be long enough for a shell to form around the egg whites, but not long enough for the flavor of the vinegar to penetrate the eggs. You don't even have to worry about scooping too much vinegar along with the eggs when you move them. @@silverwater211

It’s hard to tell freshness with bought eggs, apart from the date, but if you pop them into cold water, the freshest eggs lie on their side at the bottom of the bowl. As they get a little older, they’ll begin to lean up, then stand up in the bowl of water. If they float, they’re bad.

Put 2 eggs into a small bowl so can drop in at the same time. Vortex & drop when boiling keep heat high as eggs cool the water bring back to slow boil as quick as can. Bigger volume pot & water keeps on boil better. Not tried with so much vinegar but that seems to be only to prime them.

Rather than the 10-minute soak, it is faster and just as effective to add two glugs of white vinegar straight into your 'almost' boiling water. Just make sure your water is slightly below boiling temp when you add your eggs - don't want them dancing around in the pot.

  • @masteridiot123

I think the idea is to allow the eggs to have a consistent shape; the vinegar solution firms up the whites, so they retain their shape before they cook. It’s certainly a decent idea, considering how messy it gets poaching them normally with all the stray egg white strands. I do wonder if it affects the texture significantly or not, same with taste and cooking time.

For breakfast I like to poach my 2 eggs in milk, adding turmeric, onion powder and garlic powder to the milk. I crunch 2 shreaded wheat biskets in a bowel and lay a slice of cheese on. Salt and pepper to taste. Spoon on the eggs, yokes soft. I always buy jumbo eggs. Better chance for a double yoke. Then I pour the poaching milk on. This softens the shreaded wheat and melts the cheese. Yum! Time to break into those soft yokes.❤😋 Hot sauce is a must! Cholula green!

Likely, a common trick is to put a little bit of vinegar in the water you use to boil the egg. There is a slight change in taste and texture when you add vinegar, but it’s nothing major. I’d recommend just getting fresh eggs if you want to poach eggs, as the whites seem to get runnier and the yolks are more prone to breaking the older they are. Besides that, use a fine mesh strainer to get out the wispy parts of the white for better results. At the end of the day, just use what you’re comfortable doing or works for you. If you ask 5 chefs how to boil water, you’ll come back with 12 different recipes!

Don't do this.. The Just add a splash of vinegar to your poaching liquid and bring it to a light simmer, never to a boil. The acid helps coagulate the proteins, giving it that great shape, and you only need like a teaspoon for a liter of liquid. Source: I'm a professional chef w/ 12 years of experience.

I'm guessing you have never done a busy breakfast restaurant, hotel/resort. This is the exact method that is used for high end with volume service. You can use your basic method for an OK everyday, although adding the vinegar to the hot water actually flavors the egg more than the soaking solution.

There's a "poach in shell" method that I use but it would be impractical on a large scale. I knew that people said add a drop of vinegar but I would have thought that 1:1 ratio of vinegar and 10 mins to steep in it would really make the egg too acid... Never tried it myself though so I don't know. Maybe making it 2:1 with water to vinegar and leaving 12 mins or something would give a nice middle ground, or 3:2 vinegar to water and leaving it only 7 minutes would... Etc 😊
