How do you guys handle dormancy for them? Does it get cold enough inside your greenhouse for them even at your location, or do you control it all indoors?

They go dormant on their own.

jlsplinter sarracenia like to be wetter than other carnivorous plants.

Yes except during dormancy. Keep only moist during dormancy.
