SİMİT RECIPE 🤩 How to Make Simit at Home | #1 Turkish Street Food

SİMİT
Makes 12 simits
Preparation Time: 20 minutes + 30 mins proofing
Baking Time: 15-20 minutes
Difficulty: Medium
For the dough,
1 kg strong flour (13% and higher protein works great, or bread flour would do great as well)
1 heaped teaspoon instant yeast
1 tablespoon salt
600 ml lukewarm drinking water
For the dip,
1 cup of mulberry molasses (or grape molasses)
1/2 cup of water
1 tablespoon flour
A generous amount of half-roasted sesame seeds
• Heat your oven to 280 C (535 F) on upper and lower heat with fan. If you have fire bricks (or oven stone) place them into the oven and heat them as well.
• To make the dough, it is quite important to choose a brand of flour with 13% protein content in order to achieve the classic simit taste. You can check the back of the flour package to see the protein level. If you can’t find, bread flour works great as well.
• Mix the instant yeast with the lukewarm drinking water and wait for a couple of minutes for yeast to wake up.
• Pile 1 kg of flour on the work surface (or in a bowl) and create a well at the center of the pile.
• Add the water to the well, then mix the flour and the water gradually. Knead for about 8-9 minutes until you reach a smooth, tackless consistency. If the dough is stiff, wet your fingers and keep on kneading.
• When your dough is ready, cover the bowl with a damp cloth and wait for half an hour. When it rises, knead once more and portion into 120 g lumps. By dividing each lump into two pieces you’ll get two 60 g lumps.
• First, shape the lumps into long strips (around 40-45 cm / 16-18 in). Then, take two strips side to side and wrap one another, forming a spiral. Tie two ends of the spiral to form a circle and make sure you join them well.
• Dust your work surface and rest the simits while shaping others.
• Using a deep plate, pour the molasses, water and flour and mix well.
• On a separate tray pour a generous amount of sesame seeds. If you can’t find half-roasted sesame seeds you can roast them on a pan until they slightly change colour.
• Set your oven to 230 C (445 F) on upper and lower heat without fan.
• Starting with the first shaped one, dip your simits into the first station to coat with the molasses mixture, then to the second station to cover with sesame seeds.
• Then place them into the oven with a pizza peel and bake for 15-20 minutes until light brown and crunchy.

    Watching from the U.S. I have always wanted to try food from all around the globe. It was a dream to travel the world for a taste of the food and the culture. Now, this is done via the computer. I am able to watch people make the dishes of their culture and do my best to replicate them here. There is no comparison to the real deal - but this is the best I can do for now.     We have these sold on the streets too in Plovdiv, Bulgaria. In small shacks, dedicated only to selling "Simid". We also have a bread factory called "Simid" here. Great video!

    10 years ago, maybe a bit longer we did a thing called blind booking where you book a plane ticket not knowing your destination. My friends and i ended up in istanbul. This was so amazing and we ate a lot of simit there. Back home i went on the internet trying to find a recipe for simit and i couldn't find one. Then i forgot about it and now you reminded me of all that and i will make some simit today and sent my friends who went with me to istanbul a picture of them.

    I loved this video (and all you videos)! Not only do I learn a delicious Turkish recipe, but I also learn more about Turkish history. My husband is Turkish, and we live in Texas. His mom has been influential in teaching me Turkish cuisine, and I love following your channel to learn more - you, Bahar and all the crew make me smile and remind me so much of being around my Turkish family. One of my favorite memories is waking up in the morning to the sound of the street vendors selling fresh simit. 😋. My favorite way to eat it is with white cheese and a bit of sour cherry jam. I grew up in the southern part of the US and we love our jams! I will have to try making it myself when we are homesick for Turkey. Keep cooking and keep the videos coming! We love them! 😊

I just watched the Grand Turkish Breakfast video before this one and loved the idea of adding ingredients to olives. You are the one who introduced this idea to me.     Simit. Just divine and one of the wonderful foods that remind me I am in Turkey. When flying home from Turkey, its a Simit and a Turkish tea at the airport as the last meal before come back to UK. I might have to make them but it won't be the same as eating simit in beautiful Turkey. Love your videos.     Oh! You reminded me of how we used to get this simid back home in Lebanon (we call it kaak or asrieh which means evening in Arabic bc it was available mostly in the evening). We had it with cheese and olives and mortadella and other things. It was a real treat!

    Refika you have done it again. I made these for our household and it was a huge huge hit I love how easy it was! This is texturally so unique, thank you for sharing! We are only two people so I was worried about the amount of carbs we would be forced to eat but Bahar’s tip to freeze them was genius. I just pop it in the air fryer when our meal calls for it & have it come out good as fresh. Thank you thank you thank you! Tip: if you don’t have oven bricks, I found that parchment paper under the simit + cast iron worked really well for me all the same! The parchment paper was just Bc I was worried about the molasses sticking to the cast iron & leaving a burnt aftertaste accumulatively.
