Russian Pryaniki/Honey Spiced Cookies (raw method).Very old recipe that makes the tastiest Pryaniki!

Making Pryaniki is my favorite thing to make. The dough is very easy to work with, plus you are not just baking a tasty cookie, but also creating a piece of art! There are so many different methods you can make Pryaniki.
Today I want to show you a method, what is known as "raw method" and to me it makes the most tastiest Pryanik.
RUSSIAN PRYANIKI (raw method)
For the Honey Syrup you will need:
150 g sugar
80 g water
100 g honey
Combine sugar and water in a sauce pan and bring to a boil. As the boiling process have started( you will see tons of bubbles on the surface), count till 15 and take it off the heat. Add honey and mix well.
Cool Syrup to room temperature.
Then add:
50 g (½ stick) of softened butter
1 large egg
(Wet Ingredients)
Mix again and prepare dry ingredients.
500 g( less or more will be needed)
¼ tsp baking soda
2 tablespoon Cocoa Powder (sifted)
2 teaspoons Spice mix ( Dry Perfume)
Mix to combine all dry ingredients.
Gradually add dry ingredients to wet ingredients, first using whisk, then spatula, than mixing dough by hand. The dough has to be soft and when place on the table should not spread a loose its shape.
Cover the dough and refrigerate for 1-2 hours.
Cut pieces out of the dough and fill your forms.
Place Pryaniki on a lined baking sheet and bake at 385°F ( 190°C ) for 10-12 minutes, depending on a size and thickness of your dough.
Let them cool on the sheet for 5-10 minutes then cool on a cooling rack and decorate with icing!
To make Icing you will need:
Egg white from 1 medium egg
5-6 tablespoons icing sugar
1 tsp lemon juice
Using Electric mixer and whist attachment whisk egg white to soft peaks.
Gradually add icing sugar and whisk.
Add lemon juice and whisk to stiff peaks.
DRY PERFUME (Pryaniki spice mix)
♥ Coriander 1 tablespoon
♥ Cinnamon 1 tablespoon
♥ Cardamom 1 teaspoon
♥ Nutmeg 1 teaspoon
♥ Ginger 1 teaspoon
♥ Cloves ½ teaspoon
♥ Allspice ½ teaspoon
This mix will make you about 4 tablespoons of Pryaniki spice mix, but you will only need to use 2 teaspoons at a time in your recipe!
The rest can be stored in an air tight container.

    Hello 👋 Most definitely. You can add chopped dried fruit and nuts, but very minimal. This method makes Pryaniki very soft and crumbly, almost like a cookie. Any type of heavy filling might not work. 😊🌹

    Hi Natassya! These are absolutely stunning cookies. Your tutorial was excellent! I am not a great baker, but I really want to get molds and make these. My family member is a beekeeper and gave me honey, but it is quite dark but delicious. Do you think I can use that, or do I need a lighter one like yours?

    Thank you so much, Laura. Actually, darker honey is better for the Pryaniki recipe. I did have any. You will be able to make these, no problem.
