Russian Golden Key Cake | The BEST Caramel Cake Recipe! With Mascarpone Whipped Cream Frosting

This elegant pecan and caramel cake, also known as Golden Key Cake, is one of the best caramel cake recipes out there! It’s irresistibly delicious, with moist caramel cake layer filled with sweetened condensed milk and pecans and frosted with a fluffy mascarpone caramel whipped cream frosting. This cake is what caramel dreams are made of! My husband isn’t the biggest fan of desserts, but he specifically requests this cake every year for his birthday. It’s that good!
The name Golden Key comes from the Russian candy bar that’s the inspiration behind this cake. Both the candy and the cake are hugely popular in Russia, Ukraine, and Eastern Europe! Find another version of this cake in my cake book, The European Cake Cookbook!
RECIPE:
For Caramel Cake Layers:
4 large eggs
¾ cup (228 g) dulce de leche
1 tsp vanilla extract
½ cup (100 g) white granulated sugar
1 cup (240 ml) buttermilk
¾ cup (180 ml) light cooking oil, such as canola
2 tsp (4 g) instant coffee
1 ½ tbsp (22 ml) hot water
2 cups (250 g) all-purpose flour
2 tsp (10 g) baking soda
2 tsp (8 g) baking powder
¼ tsp salt
For Filling:
¼ cup (76 g) dulce de leche
½ cup (120 ml) sweetened condensed milk
1 cup (125 g) finely diced pecans or hazelnuts
For Caramel Whipped Cream Frosting:
16 oz (454 g) mascarpone cheese, softened at room temp
1 cup (304 g) dulce de leche
½ cup (120 ml) sweetened condensed milk
1 tsp vanilla
1 tsp instant coffee
2 tsp (10 ml) hot water
3 cups (710 ml) heavy cream, chilled
1 cup (125 g) diced pecans or hazelnuts, for garnish

Hi Tatyana, I must say I made this cake today. It was very easy but unfortunately I will give it a taste tomorrow just bcs it's my husband's birthday. The only thing that I got disappointed was that the "frosting" was very melted at the end when I tried to make the nods on top. So if it'll taste good maybe next time I will try doing it with the traditional fronting.

Hi! I hope you enjoy the cake tomorrow! It tastes even better the next day! This frosting does melt easily. Next time, place the frosting back into the refrigerator for about 30 minutes, then whisk it again.

Hi! I'm so glad you enjoy my recipes. This frosting is on the softer side. I recommend letting the cake set overnight, then it should be fine at room temp for a few hours When you're making it and it's too soft, I recommend refrigerating for 1 hour, then mixing again.

Hi! I'm so glad you enjoyed this cake before. It's one of my favorites. I'm not sure the frosting would hold fondant well. It's too soft to support fondant. I prefer to bake each layer separately so that the cake batter bakes evenly and doesn't burn on the sides. If you bake everything in one pan, the center will take much longer to bake.

Hi Raffaella! Yes, you can make it ahead of time. You'll want to keep it refrigerated the entire time. I would also cover it with a cake cover to keep the frosting from drying out. The frosting can get a bit dry, so keeping it covered will be important . Hope everyone enjoys the cake!

Wondering whether I should cut down on the granulated sugar? We are not used to eating that much sugar in the country we are in unlike when we were in the United States.

Hi Cindy! For the cake batter, I already reduced the sugar to a minimum. It's the frosting and filling that makes this cake sweet. You can add less filling for a less sweet cake
I really want to make this cake, but I am afraid of working with mascarpone cheese after I tried Creme brûlée cheesecake from your book. It separated for me and I found a fix for it online, but then it separated again while baking and looked all curdled. Can I replace it with creme cheese or maybe there are some tips to prevent it from separating (I used all ingredients room temp)?

Hi Julia! I'm so sorry you had a bad experience with mascarpone. It can separate very quickly! Yes, you can replace it with cream cheese, which is much more stable. I've learned that with mascarpone, it needs to be cold so I use it straight out of the fridge. You'll also want the heavy cream to be very well chilled, otherwise it won't whisk to stiff peaks.
Taniana, what can I substitute the buttermilk for something else? I live in UK and I didn’t see any buttercream in the shop and Kefir is quite expensive.

Hi! Yes, you can replace the buttercream with whole milk plus 2 tablespoons of lemon juice or vinegar. Add the juice into the milk and let it sour for a few minutes. Homemade buttermilk :)

It's not too sweet but a little on the sweeter side! The filling is what makes it a little sweet! :)
