Rum Old Fashioned with Coca Cola Foam

The “1887” cocktail is basically a Rum Old Fashioned with Coca Cola Foam - but made the Cocktail Time way! It was my entry to the final cocktail competition I did. This episode is part 2 of "How to win a cocktail competition", building on last week's episode, where I shared some tips and tricks to hopefully help you prepare for a cocktail competition in the future and get the best results.
This cocktail is a Rum Old Fashioned made with Brugal 1888 and homemade woody Coca Cola foam on top (original Coca Cola was introduced in 1886). I named this cocktail “1887” since they meet in the middle. Find the recipe below.

Here is how I made this Old Fashioned with Coca-Cola crown.
1887:
• 50 ml (1.66 oz) Brugal 1888
• 2 bar spoons simple syrup
• 3 dashes (5 if you are using a Japanese dasher) cherry bitters
• 1 dash maraschino
• orange peel (for a regal stir)
• top-up Woody Coca Cola foam*
Stir everything except Coca-Cola foam in a mixing glass and pour into a chilled clay mug with ice. Add woody Coca-Cola foam on top.
*Woody Coca Cola foam:
• 300 ml (10 oz) Coca Cola
• 4 g whiskey wood chips
• 2 g charred whiskey wood chips
• 0,5 g allspice berries, crushed
• 20 ml (0,66 oz) Jack Daniel’s no7
Try to remove all possible CO2 from Coca-Cola and add everything in a plastic sous vide bag. Put the bag in sous vide water bath heated to 65°C for 4h. After it’s done, filter it through a coffee filter and to a pot. Heat it up and add
• ½ sheet of gelatine
After it's dissolved, pour the mixture into a siphon and add an N2O cartridge. Shake and leave it to chill in a fridge for at least 2h.

I have a high level of appreciation for this. Rum and coke to me has always been a drink with large and obvious potential, but is usually served as two ingredients mixed unproportionately in a plastic cup and tastes horrible that way.
"Oh nice, a twist on rum and coke" *Video makes me realize I need hours and hundreds of dollars in gear and ingredients to make it happen* Back to mixing rum and coke.
Before I start getting orders - I’m just the carrier, not the creator of these wonderful mugs. But they fit really nice in your hand, I must say.
This man is a treasure. The aesthetic is 10/10. Sophisticated (the wardrobe and the mustache... my GOD!) and intelligent (the accent adds at least 10 IQ points, plus he never says dumb stuff), yet comfortable enough in his own skin that as a viewer one never feels put down or senses pretention coming from him... even though I will probably never own a sous-vide or one of those foamy canister thing-a-ma-jigs. I'm still catching up on the back catalog, but I can tell that every upload from this channel is going to be a real treat. Keep up the great work.

The creativity of your cocktails has me very interested. I've only just begun my bartending journey 2 years ago. I literally had my first official bartending shift the day we had to go lock down in my city! I would love to learn from a master such as yourself. Keep making videos!! I finally made this cocktail after a long time of anticipation, I gottta say the best part was making the cola foam, it was fun and very tasty. I think I'll be trying it with a different rum next time though. Unfortunately I feel like the brugal didnt mix as well as Id like with the rest of the cocktail. Thanks for this great recipe Kevin!

Great cola foam! If you like to do the foam consistent last a bit longer, you could add a little egg yogg with syrup mix to pressurized with colagelatine!😊👍

Gelatine sheet work as a stabilator similar to egg white, agar-agar, xantan, aquafaba, or soy lecithin. You can get foam from all of these ingredients but the most often that we use is egg white which wouldn't taste well in this case. Thank you!

Skimming I didn’t see this question asked; apologies if it’s a duplicate. For a non animal-based equivalent could you substitute powdered agar agar for the gelatin sheets in the foam? Or eggshell membrane collagen powder perhaps if going for a vegetarian but not strictly vegan sort of standard? Or would you recommend something else for a non animal based, or at least non animal flesh based alternative?

I just have to ask: what kind of wax do you use for your mustache? Do you use a semi-pliable wax or something really firm that has to be melted when you apply it? What tips do you have for daily grooming? I think there is potential for you to make a special mustache episode. My wife wants me to grow out my mustache but grooming it is so labor intensive and frustrating that I kind of don't want to do it. What's your advice? Cheers from Seattle USA!

I am using the 'Brothers Love mustache wax. It came in a tube and it's a wax you can easily apply. My daily grooming is washing with a special soap and brushing. Trimming is on the schedule every now and then. It's not that hard once you get used to it. Like everything else in life, the beginnings are a bit harder but after you get some results it's all good. Why do you sous vide the cola? Is it to remove all carbonation?
Tried to do the recipe (just plain cola, without adding anything except the gelatin in powder and without cooking it) and for some reason (even when using 2 N2O catridges) it came out like too gassy and not foamy (lack consistency and body). What I am doing wrong? :S
the way ya pronounced cream whipper sounded like grim reaper, so now i have the phrase Cream Reaper stuck in my head & that sound like it would be a great name for a cocktail no idea what would be in it tho
I wish we could've seen the side profile in a clear glass. Bet it would look cool.
Really want to try this, but don't have a sous vide - any recommendations on how to approximate it?

Since it's not a liqueur or alcohol infusion, you can do it on low heat in a pot with closed lid.

You can, but you need N20/cartridge. Also, make sure that your soda streamer can handle the pressure of N2O
