This Mezcal Summer Sipper was made as a part of a 3 ingredients challenge with Anders Erickson. I used clarified lemon juice with blended grapefruit peels, carbonized chamomile tea, and mezcal. The taste and ingredients slightly remind us of the Paloma, so I called this one the Chaloma.
‪@AndersErickson‬ is an amazing KZread bartender who also had to make the cocktail with the same ingredients that Gabiel Morales from the @Liquid Memoir picked for us.

Chaloma:
· 45 ml (1.5 oz) mezcal Vida
· 22,5 ml (0.75 oz) clarified lemon juice with grapefruit peels*
· 22,5 ml (0.75 oz) Dale Degroff triple syrup
· drop of saline solution
· top up with carbonated chamomile tea
* Clarified lemon juice with grapefruit peels
· 200 ml (6.66 oz) lemon juice
· 15 g grapefruit peels
· 0,4g agar-agar
Blend lemon juice and grapefruit peels. Heat up 50 ml (1.66 oz) of this citrus mixture and whisk in agar-agar until it's fully dissolved. Take off the heat and slowly add in the rest of the citrus juice, constantly whisking. Transfer to a bowl and place in an ice bath or freezer. Once a gel forms, strain through a cheesecloth and bottle.

    Love Cocktail Time and Anders' videos; I happened to watch his mezcal cocktail first. In it, he hypothesized that Kevin would do a "chamomile foam" vel sim., and here it is! Sparkling tea! That and saline solution really signal cocktail time for me!

    Here in Mexico there is tendency of consuming more Mezcal, and is becoming more and more popular. My favorite one is "Ojo de tigre" because the smoked flavor is very soft, and it's excellent for prepare coktails. I haven't tasted "Del Maguey Vida", but I will try. If one day you have the oportunity, you can buy a "Montelobos pechuga" bottle. This kind of mezcal is made with chicken, turkey, or rabbit breast. It has a unique flavor and is delicious to enjoy with worm salt and orange slices. Thank you for your great channel.

    This sounds great! Do you find the vida took over the drink? I like it, but it’s so much more smoky than most other mezcals that I tend to pair it with bolder flavors. The clarified lemon & grapefruit is brilliant- I will definitely be trying it. Great video and fun challenge!

    I didn't since I added just 45ml (1,5 oz) of it in a cocktail. Smokiness complimented chamomile so well. I would love to hear your opinion after you'll try it out. Thank you!

    I ask you who will surely know how to answer me: is there any preservative or procedure that I can add to sugar syrups to increase their conservation?

    So the best way is to make sure the bottle you store your syrup in is sterlized and that you keep it clean when using it. Licking the bottle cap will guarantee the syrup will spoil pretty fast. Keep it in the fridge (not on the door, since that's where the temperature changes the most). You can also make a rich syrup (2:1 sugar syrup), which will last longer, but you need to adjust the amount you use. You can check my Basic Syrups episode for more information here: kzread.info/dash/bejne/oIGJl6iaiLC3npM.html And if you have any seasonal fruit or herbal syrups you can freeze it too, to save it for later. Adding vodka or other alcohol won't really help much, since you'd have to add way too much for it to make a difference.     You definitely need to go to the gym. Your shoulder are pointy and no muscles or any kind of figure. Spend less time on drinks and a little more effort on your health
