Gennaro Contaldo is an Italian and knows how to cook (he is Jamie Oliver's mentor in Italian food) and he made a very simple risotto the kind of which most Italian cooking schools would teach. If you watch the follow-up video to this one you'll see the three commentators do a mash-up of their own risotto dishes that a dozen other Italian chef's would criticize all to pieces.

io stò a metà video ma l'unico che vedo che hanno salvato era il numero due, che ha solo sbagliato qualche dettaglio...Per il resto li stanno facendo tutti neri XD però gli altri almeno ti spiegavano perchè quel procedimento era sbagliato, da un punto di vista di cucina era leggermente più interessante

Paradosso: ragione tutti e due. Quando Contaldo l'ha tirato giù, era curdo, MA perfetto per quel che avrebbe fatto dopo (riposo per 3 minuti, intanto il riso continua a cuocere). Probabilmente rossi non si aspettava 3 minuti di riposo.

Di tuttti i vosti video "la reazione degli chef italiani ai video più visti al mondo!" questo è sicuramente il migliore. Chef carichissimi che sembrano al bar (al quarto o quinto giro) goliardia a mille. Il modo giusto per reagire agli americani che deturpano il cibo italiano. Bellissimo!

Però è anche bello e interessante,per chi come me è interessato alla parte più tecnica della cucina, capire perchè farlo in un determinato modo è sbagliato o come ottenere lo stesso risultato ma con un procedimento più corretto.

Ogni volta che ho la disgrazia di sentirlo parlare vengo assalito da una profonda depressione e da aneliti suicidi. Se raggiungere lo status di celebrità culinaria ed essere proprietari di molteplici ristoranti di indiscutibile successo economico significa trasformarsi in una creatura di una simile apatia malmostosa, sono ben felice di non avere accesso a un tale privilegio.

4 years later, I still remember the absolute perfect risotto I had at Ratanà. And Cesare Battisti was very nice and friendly.
Mi sento di consigliare a chiunque si occupi dei sottotitoli dei video, che merita anche solo per questo grande riconoscenza, di non cercare di semplificare eccessivamente il discorso e di rendere il più possibile fedelmente anche alcune delle espressioni più colorite. Boh eccitarsi per dei sottotitoli.. come al solito sempre a preoccuparci di cosa pensano gli stranieri, non sai quanto agli americani possa interessare di cosa un Italiano possa pensare o comprendere in un loro video. Se i sottotitoli in inglese ci siano o no certamente non mi cambia la vita.

@@jimmason8502 After watching various channels of Italians reviewing other people cooking Italian food, I am concluding that Italians just want to pick at every last thing, unless it's something they personally enjoy or agree with. Gennaro Contaldo was born and raised in Italy, maybe the rissotto he made was what was made in the area he is from, and the last guy was an Italian chef with a michelin star restaurant in Milan, maybe that's how they do it in Milan. The guy in the middle even said he ate there and it was good, but they still wanna pick it apart.
i love watching this kinds of videos, they are truly passionate about their profession (or art).

La cosa bella dei risotti sapete qual'è? Che esiste da una barca di anni e non mette ancora nessuno d'accordo. Tutti hanno una versione, una variante e dopo qualche secolo c'è ancora chi dibatte sull'esecuzione. Per me è affascinante questa cosa.

I made Diego Rossi's wine risotto last week but with beef and it was really good for not using the meat that he used and designed the recipe for, I will try to get my hands on some deer meat but it will be hard to get hahaha

I think the gradual adding of the liquid is a matter of impedance matching. The stirring action is supposed to combine the starch coming off of the rice with the surrounding liquid. If you have a lot of liquid, then of course in the beginning the liquid is not viscous. But the starch coming off of the rice is always very viscous when it first leaves the grains. Now, what is mixing, technically? Mixing is breaking down a component so that the liquid can get in between for finer homogeneity. You're mixing with a spoon or spatula. If the liquid is not viscous, the stirring is ineffective, because you're just pushing the blobs of starch around, like little boats. It will take a lot of effort to finally break the boats into smaller pieces. But if you just use a little bit of liquid, then even when a little bit of starch comes out, already the liquid will become very thick. It's easier now to break the boats with your spoon. . In short, if you add the liquid gradually, then the liquid will always be viscous, and the effort of your stirring will be more efficient in mixing in the starch.

@@xargeshx nah Italians love being clowns and exaggerate over trivial things like their food in order to get attention from foreigners ( mainly Americans). The technical explanations were so ridiculous that made me cringe, when everyone knows that italian cuisine is nothing formal like would be french haute cuisine. Make risotto as you wish, it's only food nothing else.

I had to drive over an hour round trip yesterday to get carnaroli rice, but it's worth using the correct ingredients of high quality.
For most of my risottos first I make a good stock. Chicken, beef, vegetable or seafood depending on the dish. I use only Vialone Nano or Carnaroli. never Arborio. I then sweat finely chopped onion or shallots when translucent I toast the rice. I then add some white wine and stir till the wine is incorporated. The I slowly add the stock (piano piano) just covering the rice and stir occasionally adding the rice. If I’m making a vegetable risotto I use vegetable stock and purée some of the vegetable and also leave some raw cut on the bias. When the rice is close to being al dente I add the raw vegetable and purée. When cooked through I remove from the flame and mount the rice with room temperature butter and Parmesan cheese. I taste for salt and pepper.
