Ricky講煮講食 名廚Ricky獨門海南雞飯秘技大公開 揀米喺重點 顆粒分明好食到癲 Ricky’s Secret Recipe of Hainan Chicken Rice

「這款米粒形態漂亮,色澤又好,而且我用多少水,多少米煲出來的便是這樣質感的飯,水準穩定,所以我用了十多年,都只用這款金象牌香米。」名廚Ricky讚不絕口地說。
今次Ricky便用這款米來示範他至愛的海南雞飯食譜。很多人認為海南雞飯的主角是雞,但他說最引人入勝的是飯,而不是雞。因為雞要花多些時間去處理,所以他建議先劏雞。「先將雞開邊,去掉它的雞油出來。除了雞肚腩、雞胸和雞頸的雞油,甚至雞皮也要取出來。因為雞每個部位的皮和油都有不同味道,所以煉出來的味道也不一樣。」因為雞胸一般比雞髀快熟,所以要在雞髀最厚的位置切一半,這樣便可以令雞胸和雞髀一起熟透。切記要用鹽來醃雞,跟著放進雪櫃,待第二天才取出來或浸或蒸,這樣有助增加彈性及肉味。
跟著便要煉雞油來煮飯。先將之前切出來的雞油放進鍋裡,加些少水進去後再下鹽。當鹽煮溶了,並滲進皮和筋膜,最後便留下脆卜卜而帶鹹香味的油渣。將些少油渣拌飯來吃,非常滋味。
「要煮一煲出色的海南雞飯,當然要有優質的米。米粒的外貌很重要,兩頭尖尖要修長,要有光澤,還要溝得好,入口既軟糯又有香氣,這款米便符合了我的要求。用它煲出來的飯是完整是一顆一顆的,米粒的形態多漂亮。當你找到適合你的米種,便會知道怎樣煲出一個別人不能超越你的海南雞飯。」Ricky自信地說。

Hainan Chicken Rice
材料 (Ingredients):
雞 1隻
Whole Chicken 1pc
米 300克
Rice 300g
雞湯 330克
Chicken broth 330g
蒜頭 20克
Garlic 20g
乾蔥 20克
Shallots 20g
香茅 3支
Lemongrass 3pc
生抽 30克
Light soy sauce 30g
辣椒汁:
紅辣椒 200克
Chili pepper 200g
蒜頭 40克
Garlic 40g
汕頭米醋 100毫升
Shantou rice vinegar 100ml
糖 3克
Sugar 3g
鹽 6 克
Salt 6g
薑蓉:
薑 50克
Ginger 50g
米糠油 20克
Rice bran oil 20g
鹽 2克
Salt 2g

    Usually, Malaysian Hainanese chicken rice don't use lemongrass, or pandan leaves. Saute minced garlic & ginger with chicken fats oil & rice. Then adding salt, and chicken broth to boil the rice. Of course, everyone can do it a little differently according to his palate. Chicken either steam or boiled but steam will retain the flavour more than boiling. In the restaurant chicken are usually boiled but when I prefer to steam it to retain the flavour.

    Yes, effort goes in the preparation of the rice. garlic, lemon grass and onion. Learn no need to stir fry lemon grass but direct into rice. Ricky point is quality rice cook with effort skim off the chicken skin with its oil produced will be superb taste to the rice, however sinful it may be. Never mind, once a while, let go and enjoy!. Thanks for the effort goes in produce a superb pot of chicken rice, even marinate the chicken overnight to let salt penetrate to its meat. Ricky is indeed a cook of different class. Efficient and achieve the desired result !

    I think Chef wish to have his favourite rice grain cook only with chicken stock first, then coat it with fragrant oil. It will be soft , fluffy and evenly coated with oil.
