Ricky講煮講食 名廚Ricky天花板三日兩夜精煉羅宋湯:每啖湯都係蔬菜精華 飲埋呢支抵飲香檳無得頂 Celebrity chef Ricky’s favourite Borsch recipe
「因為蔬菜的味道完全融和,喝下去的時候,每一口湯都喝到這麼多蔬菜的精華,這便是我最喜歡的羅宋湯。」名廚Ricky說。
這次他想教大家去製作一個高級餐廳版本的羅宋湯。「做羅宋湯要準備很多材料,除了買齊基本的蔬菜,切蔬菜也有些少技巧,尤其是甜椒,下刀時要在它中間部位的坑位下刀,這樣切出來,每片都有一個很完美的孤形。另外頭部和尾部亦不用浪費,切出來之後去掉蒂部,跟著在它們的罅位切開,便可以一拼放進湯裡面去煲。」他解釋。
他強調做羅宋湯的蔬菜,除了椰菜和蕃茄,其他材料必需炒過,才可放進去煲。「我很喜歡下牛油去炒,尤其可以令洋蔥的味道更突出。炒好蔬菜之後,隨即放入椰菜和蕃茄。以前做茶餐廳的時候,還會下牛筋。因為羅宋湯本身用牛骨湯做湯底,但牛骨湯底太花功夫。所以用這些有肉味的牛筋,便省回不少功夫。」他說。做羅宋湯還有絕招。除了下茄汁,意大利粉醬汁和茄汁都不可缺少,因為它們可以令到蕃茄的味道更加濃稠。
最後還要下檸檬,將它開邊之後,先搾檸檬汁在湯裡面,然後將檸檬掉進去。因為檸檬的果皮煲過之後,令湯增加檸檬的香味。但檸檬在湯裡最多煲半小時便要撈起。因為檸檬的果皮,如留在湯裡太長時間,便會煲出苦澀味。
煲羅宋湯的時間也是關鍵。「第一天煲羅宋湯的時候,滾了之後轉細火,然後煲個多小時,待它攤凍之後便放進雪櫃。第二天取出來再滾起它,
轉細火又再滾個多小時,直至第三日又把湯滾起便可以用。你要煲到蔬菜還有形狀,但味道完全混進湯裡。這樣煲出來的羅宋湯,雖然沒有了蔬菜的清脆味道,但仍會喝到有很多蔬菜在湯裡面。」Ricky笑說。
他還特別推介Charles de Cazanove Brut Vintage 2008 的香檳來伴羅宋湯。「她的色澤漂亮,嗅起來還有很多果香,這種豐盈果香的味道跟羅宋湯融合在一起,真的很匹配。加上價錢才不用$400,非常抵飲。」他滿足地說。

For ABC or any variety vegetables soup. Try to cut cube bite size (0.5cm to 0.8cm) , so when you use a round spoon to scoop (all small cubes) in 1 mouth bite. Don't cut big irregular size.

When I see the video’s up, I would drop everything I’m doing, even the things I like to do, just to WATCH THIS SHOW!!! This is so fun to watch. The two chefs are so talented and instead of watching something and let time pass, this is a show with quality-better than classes on the MasterClass app. Oh I left a wrong comment on a wrong channel. LoL. Love Chef Ricky too much 🫶🏼 the comment was actually very genuine tho - Air France is a great airline. Champagne served on flight is excellent. Def better than our HK home airline in my opinion. Food and service were great. No disappointment at all. Probably also because they will keep serving you alcohol and making everything wonderful.
