Ricky教室 氣炸燒腩仔 爆脆肉嫩 零失手 公開簡易烹調秘訣 全靠有個"好幫手" Roast pork belly with an Airfryer to get crunchy skin
「聽下這麼美麗的交響樂曲,這個小寶貝做出來的燒腩仔,真是脆到會嘈吵別人。」名廚Ricky笑說。
Ricky今次用朋友送來的Philips雙速萬用氣炸烤焗爐來做燒腩仔。他建議買黐著脆骨的位置,因為肥瘦分佈較平均。買回來之後,將一高一低的地方輕輕切掉,以便燒起來更容易。
「很多人會先將燒腩肉出水,但我會直接將出水、烚熟及入味的步驟一起去做,以便省卻步驟。不過,輕輕的去烚皮是不足夠,一定要煮到完全軟腍,變了骨膠原的質感。待你燒的時候,才容易做到鬆化的效果。」Ricky說。
烚好豬腩肉之後,在中間開刀以便它平直起來,這樣不論醃皮或燒的時候都會更均勻。第二個步驟便是刺豬皮,因為皮已烚到皮有些少軟,這樣剌便很容易刺穿表皮。他強調會打斜的去刺,因為穿透力一定比直剌進去的強。
為了令豬皮燒的時候,產生鬆化爆皮的效果。他先用大紅浙醋混合梳打粉,再用一張廚房紙放底,然後將豬腩肉的皮層放進去溶液裡面浸。「因為豬腩肉有重量,當放進去的時候,它的豬皮便緊貼著這個盤,變了那些溶液很多時,入不到中間的位置。但是有張紙幫助便沒有問題。」他細心地解釋。
豬腩肉放進去氣炸烤焗爐之前,還要做一個用錫紙做的盒,加上噴濕的廚房紙墊在底部,去保護側邊和底部的瘦肉,以免它經過長時間烤焗而變得很乾。
最後他把氣炸烤焗爐調較至185度至200度,先用低風速將表層輕輕烤乾些少。跟著用同樣的溫度,再以高風速烤多三十分鐘。「新鮮出爐的燒腩肉,真的做到皮脆肉滑。比起專業的蒸焗爐,做出來的效果還要好。」Ricky興奮地說。
燒豬腩肉
Super Crispy Roast Pork Belly
材料(Ingredients):
豬腩肉 400克
Pork Belly 400g
水 2000克
Water 2000g
鹽 200克
Salt 200g
糖 100克
Sugar 100g
大紅浙醋 100克
Red Rice Vinegar 100g
梳打粉 10克
Baking Soda 10g

外行人做個成功家庭式燒肉 真係非常困難 跟著 Ricky 先生的步驟 明顯接近成功 但因只用局爐 出黎層皮未能鬆化,之後笫二次再試 250 度 30 分鐘拎出黎 放入 grill 爐五分鐘 終於層皮脆同 hon hon 聲 再次多謝 Ricky 先生無私教學 🙏🙏🙏🙏🙏

Thank you for the tricks. 1:50 begins,3:26 cook in salt water (100g salt 50g sugar per one litre of water) , 6:03 100g vinegar and baking soda mixed well and paper towel on bottom, belly skin soaked for an hour , 8:03 protect meat with foil. 10:22 air fry 200C first low fan 10 min, 2nd strong circle for 30 min

今日跟你食譜整, 一個下晝就可以有得食,絕對係快。 可能因為沒有氣炸鍋的緣故, 做唔到鬆脆的皮, 只是脆皮, 有小小硬。 用普通toaster oven, 焗三四十分鐘 仲未開始爆皮, 可能就係問題所在。 看了你其他的comment, 知道用普通焗爐是要用最大火, 放在頂格。 明天會試多一次。 多謝Ricky sir分享烹調心得。

请问如果气炸锅没有调风速的功能的话,头十分钟怎么烤?把温度调低一点吗?
