RICE COOKER Castella Cake - no oven needed! Fluffy and light [Beginners] 电饭锅古早味鸡蛋糕,松软不腻,无需烘培!【懒人版】

Hey guys! As one of Singapore's Circuit Breaker measures, cake productions are to be sadly suspended. For those with a sweet tooth like me but have no oven at home, celebrate because this simple cake recipe is done with a RICE COOKER!
In this video, I had used a few substitutes for some baking tools/ ingredients that not everyone might have at home.
Here are the tips:
1. To substitute cake flour, pour 1 cup (240g/ 16 tabletspoons) of plain/ all-purpose flour and 2 tablespoons of cornstarch into a sieve and sift TWICE. Measure out the final amount that you need, NEVER press down on the flour so as to retain the air incorporated required for the airy texture of the cake.
2. To substitute a hand whisk, use 2 forks overlapping each other and tie it with a rubber/ elastic band as shown in the video. To get more grip, wedge a paper towel in between the handles of the forks.
3. And of course, to "substitute" an oven, you need a rice cooker! I am using one with a non-stick pot; this saves me trouble from having to grease it.
Ingredients:
4 large eggs, yolks and whites separated (a good guide of a large egg is 60g, otherwise use 5 eggs)
50g white sugar (for the egg yolks)
50g white sugar (for the egg whites)
90g cake flour, or the substitute cake flour (see above)
20g vegetable oil
25g full cream milk
1 teaspoon vanilla essence (optional)
Steps:
1. Whisk the egg yolks together with 50g white sugar until all sugar are dissolved and the mixture turns a paler yellow.
2. Whisk the egg whites separately in a CLEAN AND DRY BOWL WITH A DRY WHISK, mixing in 50g white sugar in 3 parts. Stop when soft peaks form.
3. Fold the egg whites into the egg yolk mixture with a spatula in 3 parts. Do not stir vigorously.
4. Add in 90g of sifted cake flour, or the substitute cake flour. Fold to combine.
5. Pour in 20g vegetable oil and 25g milk, fold to combine again.
6. Grease your rice cooker pot with vegetable oil if necessary. Pour the batter into the rice cooker pot and press 'Cook' (or however your rice cooker works for cooking white rice). You DO NOT have to preheat the rice cooker.
7. When the rice cooker is done cooking, insert a skewer into the middle of the cake to check if it is cooked. If the skewer comes out clean with only a few crumbs sticking to it, it is done. Otherwise, press 'cook' again. Some rice cooker brands might require cooking it twice.
8. When the cake is cooked, run a spatula or knife around the pot to loosen the cake and turn the cake out onto a cooling rack. Serve hot or cool.

6.如有必要,请在电饭煲锅中抹上植物油。将面糊倒入电饭煲锅中,然后按“ 煮饭程序”。您不必预热电饭锅。
7.电饭锅煮好后,在蛋糕中间插入一根竹签,竹签干净不沾面糊就可以了。否则,再次按“煮饭程序”。一些电饭锅品牌可能需要煮两次。
8.蛋糕煮熟后,用刮铲或小刀绕锅松开蛋糕,然后将蛋糕放到冷却架上。完成!

    Works great if you pay attention to instructions. kzread.infoUgkxviiltW7NlHbp_VL_bLbIkbLAvILVhnia For those that complain about "mushy" or "wet" rice I suspect they are using the included cup to measure rice (which is really only 3/4 cup) and then putting in water using a separate measuring cup that is a full cup. This results in too much water and you will get mushy or wet rice and think it is not done. Just use the included cup for both rice and water, or your own measuring cup for rice and water according to your package directions. It will come out fine. I've used mine for years for brown and white rice. If your machine is bubbling white froth out of the steam vent then it means you should have rinsed your brand of rice first to remove some of the starch. Sheesh. Makes me wonder how people can cook well enough to feed themselves.

    Just attempted making the cake. It turned out well and family likes it. Sweetness level is acceptable and for a no butter cakes, it’s good 👍🏻 🍰💕

    I tried this recipe and it was really great! Soft and fluffy even after 2 days! And the taste was great~ Cooked twice the rice time, so around 50 min. I'd recommend to be careful with the time though, my top was tiny bit darker :) thank you for your recipe!

    In the tip section : The substitute flour stated 240g plus corn flour. The recipe called for 90g of cake flour. Is there a typo error here, vast differences in weight ?

    Hi Karen! Thanks for the question. :) As it is quite challenging to make a combination that weighs exactly 90g, I have combined all-purpose flour with cornstarch that is of a greater volume. The substitute for cake flour is created by combining 240g of all-purpose flour with 2 tablespoons of cornstarch. You may also halve the recipe since the cake recipe only calls for 90g, i.e. 120g of all-purpose flour with 1 tablespoon of cornstarch, and then measure out 90g of the combination. (P.S: I made more of the flour because I was actually making more than 1 cake! ;)) In short, the actual cake recipe would call for only 90g of cake flour, or 90g of the substitute flour.

    Ahh I tried to make this right now, but my cooker only has "cook" and "warm" After 5 mins it switches to warm. Hopefully It still cooks

    hi! i usually weigh in grams as that is more accurate. if you bake often, a small weighing scale is a good investment! :) but you can convert to cup by using google to find out! because the conversion from grams to cups vary for liquids and solids.

    i tried your recipe, and my Tefal rice cooker have a "cake" function button, so i use it. But the result, my cake was dry and not as soft and not even jiggly and the middle part of my cake kinda collaps on the top. I dunno what went wrong.

    hi Jas! maybe you could try the “cook rice” function to see if it works! cos this recipe is crafted to fit rice cookers without a cake function :)

    Hi, just to check if its only required to press cook only once? But if the skewer poked into the cake after 1 turn of cooking comes out not totally cooked, will it burn the cake if i press another round of cooking? Thank you in advance 😊

    Priscila Wang Hi! If the cake is not cooked after one round of cooking, you should cook it another round. However as rice cookers differ by type, we will only be able to tell by trying it out. I do know of friends who cook the cake twice and it doesn’t burn, and it comes out nicely cooked! :) the great thing about rice cookers is that there is a threshold of temperature it can reach, so heat is pretty much controlled! :) keep me updated on how it goes! ☺️

    @@ezercafe Hi, my cooker has only a on switch with steaming afterwards, but it has a glass lid instead of a whole apprature can i make the cake if i put a round of parchment on the top before I putt on the lid?

    hi! I wouldn’t recommend as non stick serves as a good surface for tipping the cake out. if you really must try, I recommend you oil the inside of the cooker with some oil or butter! :)

    你好!手动打发差不多得用上15-20分钟左右,要看你打的速度。如果你没有一只开关电饭锅盖,因为不会出现水蒸气落在蛋糕的问题。 我个人是没有遇到这个问题!谢谢^^

    Great !! In our model we cannot press the switch immediately again, we need to wait about 15 minutes to press again. What about your model ? What we can do ?

    hi! Thank you for your question. :) My first question is, after you had cooked the first time, was the cake fully cooked? You may test it by inserting a skewer and if it comes out with only a few crumbs clinging onto it (no wet batter), you are good to go with just one cycle of the cooking process! If you have tried and your cake still isn't cooked after one cycle, my suggestion is to try again but this time, do not open immediately when the rice cooker is done cooking, but let the cake continue to cook in the 'warm' function for 15minutes. After that, open and check if the cake is fully cooked. If it is still uncooked, then press down again to cook a second time, but this time you have to watch your cake because every rice cooker is different. I would suggest cooking for 10mins and then check the doneness of the cake, and continue the cooking process in 5min intervals until the cake is fully cooked. I acknowledge that my recipe created for smart rice cookers may cause some inconvenience when using traditional rice cookers, and I apologise for the limitation. Nevertheless I would be excited to hear from you on how your cake turns out! :) Thank you and Shalom!

    hi Ashley, the recipe calls for cake flour, so if you don’t have flour+corn starch, you will have to get cake flour. :)

    wan hui tan 你好!目前我使用的是”煮饭”选项。^^ 不过我相信智能电饭锅的”蛋糕”选项是根据烘培蛋糕的做法而设计的,所以你也可以用”蛋糕”选项。:)
