Bash-Mash “Ezme”
Servings: 6-8
Difficulty: Easy
Prep time: 1 minute
Cooking time: 15 minutes
4 green pepper, roasted, or 2 bell peppers
5 tomatoes, roasted
1 onion, diced
½ bunch parsley, chopped
1 tablespoon red pepper paste
1 heaped tablespoon ground sumac
5 tablespoons of olive oil
1 pinch of salt
2 tablespoons of pomegranate sour, you can make your own bit.ly/3GItHAI or you can buy etsy.me/3odr4R8
- Fire roast all the peppers and tomatoes on “közmatik” (etsy.me/3KF6oJf). Otherwise, you can directly roast them on stove as well.
- After thoroughly roasted, place them in a bowl, close a lid for the hamam effect. It will ease to peel the skins. Peel all the vegetables.
- Add the roasted tomatoes and peppers, onions and parsley, pepper paste, sumac, olive oil, pomegranate sour and salt to a slightly high-bottomed plate that you will serve on and start to mash with a glass with sharp edges. A metal cup always safer than glass but both work great.
- Depend on your choice you can add some pomegranate seeds and olive oil on top. Ezme is a beauty by itself but also a great side dish for köfte, kebap or hot dogs!

    Refika, our Mexican culture has Pico de Gallo which is almost like your recipe. Instead of parsley we use cilantro, we slice and dice tomatoes, onions, serrano peppers, the cilantro, squeeze lime juice, salt and pepper to taste and ARRIBA! In our grilled meats, tacos, gorditas, beans rice etc. I'm glad y'all are safe. From Texas, a 5th generation TexMex, hasta la vista.😊

    I was in the international ingredients aisle at the grocery looking for coconut cream and I saw jars of sumac and nearly screamed! Yes, I now own sumac 😊 and the aroma is something I can’t quite describe - so tangy and acidic - and have been enjoying it on my toasted bagels so far and have a few tablespoons infusing in some olive oil for a salad drizzle. I’ll be trying this recipe when the garden has gifted me with fresh tomatoes. It looks delicious as always. 🇨🇦❤️

    You had me at sumac. A favorite spice! I even learned to prepare my own some years ago. The species of tree needed matures well in the Seattle area. And pomegranate.such a wonderful taste. BTW, for those who have them, i find a large metate is perfect for the "pasting" process. Or even a large surabachi. As I am a potter, it is easy to make on a wheel, and so useful for both wet and dry grinding.

    I have an Alaskan knife called an ulu. It is curved on the cutting edge and has a handle opposite the cutting edge. It came with a bowl cutting board so things don’t roll away when you are rocking the knife back and forth while cutting. I think it would work very well for this dish. I will try it when my tomatoes and peppers start coming on.

    I don't know how to post pictures but speaking of Sumac, it is growing wild near my house I have an unlimited supply of fresh sumac and since nobody knows what it is, I have a monopoly on the tree/shrubs. I was so excited when I found out. I know it seems weird but spices and herbs like mint, dill, sumac, rosemary and sage grow wild in Florida, these herbs were brought over by Spanish Muslims escaping inquisition and have in the past few centuries spread throughout rural parts of Florida. This dish minus the veggies is free like printing money.

    Thanks thats one of my favorite sides. The recipe is easy to follow. And i agree some recipes are better in traditional mortar pestle, as modern blender dont smash the ingredients the same way and both taste very different.

    I just found your channel, and we are so excited! We live in the US, but with my kids we choose a country each year to learn more about, so we try to make as many recipes as we can find as well. I think kids remember more when they make and eat the foods. You had me when you dropped the lemon in the hummus recipe, and used the bruised garlic :) Then I felt at home. Thank you!

    Thanks for sharing this with us Refika 🙏🏿, This recipe is the easiest of all your recipes for me and this is probably b'cos we have the same with peppers, tomatoes, onions, parsley..... but with different spices added. We also add dry or boiled shredded maquereaux fish, shrimps & periwinkles. We eat this with bread, rice, boiled or fried sweet or Irish potatoes....... I would ❤️ to have a taste of yours with different spices from the one I'm used to. It will surely taste😋😋 divinely great 👍. Thanks again for sharing this with us 🙏🏿🤗.
