LENTIL BALL / LENTIL KÖFTE
Servings: 8-10
Difficulty: Medium
Cooking time: 30 dk
Prep time: 10 dk
2 cups red lentils
4 cups of water, 1 L
1 cup fine bulghur
2 onions, chopped
2 tablespoons tomato paste
2 tablespoons red pepper paste
1 bunch of spring onions, finely chopped
1 bunch of parsley, finely chopped
¾ cup olive oil, 2,82 oz or 80 g
1 tablespoon cumin powder
1 teaspoon black pepper
2 teaspoon salt, according to saltness of the pastes
Serving;
Lettuce leaves
Lemon slices
• Rinse the lentils, transfer them in a pot. Add the water and 1 pinch of salt, let them boil for 20-25 minutes on medium heat. Don’t forget to close the lid and mix time to time.
• When the lentils are all cooked and look like a thick soup, turn the heat off. Open the lid and wait for 5 minutes for the first heat to come out.
• Add the bulghur into the cooked lentils and mix, close the lid again wait for 10-15 minutes.
• While the bulghur absorbing water, pour 3 tablespoon of olive oil, onions and a pinch of salt in a pan on high heat. Sautee them until the onions get softer and a little caramelized. Add the tomato and pepper paste, cook them like 3-4 minutes and turn the heat off.
• When bulghur-lentil mixture and onion-pastes mixture get cooler, mix them in a tray. Add cumin, black pepper and salt and knead them until they all mix well. Add rest of the olive oil and knead again.
• Add spring onions and knead until their edgy taste gets lighter. Then add the parsley. Knead a bit more to all ingredients mixed well.
• For the traditional serving style grab lime size pieces, place inside your palm and squeeze gently to give the hand shape. To shape easier wet your hands time to time.
• You can also serve lentil köfte as a big ball, and let your guests take their own squeezes. Or you can make small balls and cover them with some sesame seeds, red pepper flakes, poppy seeds or parsley. In another option you can shallow fry your lentil köftes.
• Serve your lentil köfte which is the best vegan treat with lemon slices and some lettuce leaves.

As a meat lower, I can confirm that lentil köfte is freaking delicious. Don't hesitate to try it even if you are not a fan of vegan recipes. It's a food older than a few hunderts years old and it survived for a good reason.

I am not vegan/vegetarian also. I do, however, have a list of favorite vegan foods. All of them are from cultures that have a long vegan tradition. I won't touch most American vegan food but this is at the top of my list of vegan foods to try.

vegan recipes get a bad rep. probably because there are so many people who make TERRIBLE meat-free food. it's a d*mn travesty. and forget restaurants. you'd be lucky to find 1 out of 100 that are good. i was vegan for years BUT I COOK and i was flabbergasted that their doors were even open. trash food. (how do you mess up split pea soup?????? no flavor and it was THICK, like they had no concept what *soup* was. gross.) meanwhile, i've cooked for friends and they were surprised it was good and they didn't miss the meat. i think people get too caught up in labeling foods. if it's good, it's good. plenty of traditional stuff didn't have meat. sometimes because of hardships (costs), or scarcity. and yet new, wonderful foods could be born! : )
Finally a DELICIOUS lentil recipe that is not curry. I just made a half portion. I may eat the whole bowl. ❤❤❤

You can do a children's cartoon Refika version with easy recipes and safety tips in several languages. That would be adorable. You could also include cartoon versions of your crew to teach about herbs, spices, vegetables, and some basic gardening. That would probably be a great idea and will get children more interested in real food.

A Turkish friend taught me how to make this YEARS ago - and it has become a firm favourite! These patties make GREAT party food just on the lettuce leaves but rolling them into coated balls takes them to a whole new WOW level - so *THANK-YOU Refika!!* I've found the paste can happily be made the day before but leave the herbs to the day of serving. We have also used leftovers in burgers and wraps - versatile, delicious and healthy!! Next time though any leftovers will definitely get the 'fried patties' treatment. YUM!!

My mum always made a red onion, tomato and sumac salad with even more chopped parsley, olive oil and lemon juice and its great dipping the köftes in this salad.

I am new to Turkish food. (I started dating a guy who's half Turkish, half Persian a year ago). The salad you mentioned sounds good. Could you give rough estimates of measurements for the salad? If you are like me, you never measure anything. LOL

@@tessalynne6778 oh, how nice 💕 let me give you an estimate recipe, you can add salt, olive oil and even the sumac to taste, and if you're not vegan, this onion salad goes sooo well with meat köftes as well) Onion Salad 1 medium onion (diced or strips) 1/2 cup (or a little less) finely chopped parsley 1 medium-sized diced tomato 1/2 tablespoon sumac 1 tablespoon olive oil Add sumac into the onions and mix, add parsley, tomato and olive oil and mix, serve with lentil köftes.

@@ulqulqu thank you so much! Just one more question for clarity if you don't mind. Is the sumac you use the powdered stuff I can get at Middle Eastern stores? Just checking because I grew up with wild sumac trees and some people used the berries from them to make a drink similar to lemonade but I don't have access to that now.

This is really delicious. I made it with just the oil for frying the onions, and didn't knead it as much as Refika did, and it was terrific, despite my laziness and the much lower fat content. Thanks so much for this fast and easy healthy recipe!

There is a similar dish we make in India, with cumin, black pepper and ginger. We use the Mung lentils traditionally for this with lots of clarified butter instead of olive oil. Lentils and rice traditionally, but the healthier version I do is with Bulgur. Adding other spices and veggies are optional and are also regional variations. Personally I enjoyed this video! My grandma used to make a big pot of vosp (lentils) and then add wide noodles and broth to make soup one day, or add bulghur to make kufte another… such a wonderful memory. And lots of ideas to try, too-definitely going to be the vegan dish at our next party!

I’m Armenian. We do not wrap the keofte in lettuce. We dip them in a salad made of tomatoes, red or yellow onions, parsley and fresh mint diced very finely, and some lemon juice as a dressing. No olive oil. It’s sooo good! Of course, naturally, we have integrated a lot of dishes into the Turkish cuisine as we have cohabitated for centuries. Too bad I can’t eat keofte bc I can’t eat bulgur or any kind of grain. 😊
