Raspberry Sandwich Cookies - Raspberry Slices

Raspberry cookies have long been popular, and now there are even more people who choose to celebrate Christmas with raspberry cookies. These are a favorite from the Danish bakeries.This biscuit/cake is called Hindbærsnitter in Danish. A simple treat to bake, the only tricky bit is the cutting of the cooled down biscuits - but practice makes perfect.Then if you also want to, you can try this easy recipe for raspberry slices.
Ingredients:
200 g Cold butter
350 g All pour pose flour
150 g powdered sugar
2 teaspoons vanilla sugar
1 Egg
Glaze:
200 g powdered sugar
2 tablespoons of water
Filling:
200 g raspberry jam
Garnish :
Dried rose flower, freeze-dried raspberries, sprinkles or crumbs
Baking time:
20-25 min. at 180° C (350° F)
Raspberry slices
Cut the butter into small pieces and crumble it into the flour.
Add icing sugar and vanilla sugar and Quickly assemble the dough with the egg.
Put the dough covered in the fridge for 1 hour.
Divide the dough into 2 portions. Roll out each portion into a square (approx. 20 x 30 cm).
Divide the dough again lengthwise and bake the 4 sheets of dough on a sheet of baking paper until they are golden.
Let the cakes cool completely.
Glaze
Stir the glaze together.
Spread the raspberry jam on 2 of the dough sheets.
Put them together and spread with the glaze.
Cut the cookies into 5-6 cm slices and decorate with dried rose petals, freeze-dried raspberries, sprinkles or crumbs.
