I have used here Quinoa instead of the Maida to make a Healthy alternative to our regular bread .
With Easy-to-follow instructions and Special Tips you'll be able to bake a delicious, fresh bread in no time.

Recipe
Ingredients
Quinoa Flour (Dry Roast Quinoa and grind it in Mixer to make it a fine powder) - 100 Grams
Rice Flour - 100 grams
Potato Starch - 100 grams
Psyllium Husk - 20 grams
Salt - ½ teaspoon
Yeast - 7 grams
Sugar - 14 grams
Vinegar - 10 grams
Olive Oil - 10 grams
Warm Water ( Total ) - 380 grams
Milk - 1 Tablespoon - for Brushing the bread
Sesame Seeds (White/Black) for sprinkling on bread (Optional) - 1 teaspoon
Butter (Melted for Brushing the Pan and the Bread) - 2 Tablespoons

Can I bake in microwave? What will be the temperature and time? Also in microwave we can't put hot water. Is it okay. Please reply

If your Microwave has Convection mode , then you may use it in convection mode. The procedure will be same . You may skip putting hot water , resulting in might be slightly different, but that should be good too 😊👍... pls try and let me know !

No, this recipe requires yeast .

It seems you over proofed the dough before baking. It should be just double in size or slightly less. Also , pls dontreplace any ingredient 😊
Can I use soji instead of potato/tapioca flour?

Sooji contains gluten.
Tried making this bread, it doubled in size, while baking is rose a bit, but looked good in the oven. Baked for 30 minutes, but was not brown on top, so kept baking for another 8 minutes, top was light brown, hard knock sound on top. After cooling it all sunk in😢😮 what could be the reason.

Hi Tina . It seems that you over proofed the bread before putting in the oven . It should be just double or even less but not more. If you could share me photographs on Instagram DM , it will be more clear.
