Piperade Recipe | Traditional Basque Home Cooking
Let my dad share with you his mother's recipe for piperade, a traditional tomato and pepper stew from the Basque Country. I love "piperrada de Euskal Herria!" I love your dad, he is so lovely!
Omg, I love this technique!!! I usually just place all the ingredients on a cookie sheet, drizzle olive oil, grind salt and pepper, and oven roast them for about 30-35ish mins. Instead of flour, I use oven toasted bread. I peel the tomatoes and combine everything in food processor. :D

Interesting process!
120 Celsius in the oven for 20 minutes will sterilise the mason jars. I have been doing a lot of fowlers vacola lately which is a similar concept but likely a British version. Actually still got a bunch of pickled eggs from this morning just cooling in the system right now.

Is this like a salsa? What would you use it on?
Iberian ham from the Extremadura region where the Serrano ham was born and invented millennia ago since before the Romans arrived on the Iberian peninsula, a good product but if I have to choose I will go with paella and horchata but hey Everyone has their likes
