Not sure about the flavors in this soda bread, but Paul's regular soda bread is the closest to the soda bread I had in Ireland. If I run out of whole meal flour, I sub in about 1/2 cup of oatmeal for texture.

I’m Irish Living in Canada and my favourite Irish brown soda bread recipe is by Gemma Stafford’s mum on Bigger Bolder Baking. That recipe has a 50/50 mix of whole wheat and white flour, but it also includes an egg. I sometimes replace the egg with a flax egg. When I don’t have buttermilk on hand I make a substitute by adding lemon juice of vinegar to milk. I also frequently add other ingredients to my soda bread. Cheese (Kerrygold Reserve Cheddar) and chopped spring onions are some of my favourites.

Buttermilk traditionally was low fat when it was the liquid leftover after making butter. Now that it's cultured, it's possible to use whatever fat level milk. If there isn't any available in your area, you can either culture it yourself or just use the regular stuff (which is what I do).
