We’re a pretty mixed family, I’m Sicilian born in the US and my wife is from Japan, but we loves us come corned beef with carrots, potatoes and carrots. Anyway, we make the beef in the stove top and I hated throwing away all that wonderfully flavored and salted broth, so one day I asked my wife to use the liquid in place of water the next time she made a batch of rice in the rice cooker. The results were amazing.

✨💖✨My father was Irish, but was a little boy when my grandparents brought the family over from Ireland. My uncle had stories about the corning barrel at the local grocers (mind you, this was in the 1920s and then on into the depression. So my father didn’t have corned beef on holidays until he married my mom. She always called it Irish turkey, and served it every St. Patrick’s day. Then the stories would come out. But we always had a ton of Coleman’s mustard powder in the cupboard. When I got older, my father wanted me to learn to make soda bread, and I learned the same basic loaf you showed us here, though we usually had ours with tea. I always lightly tossed mine with a fork, just until it pulled together. As you show here, the secret is not to over handle it, or it can be a dreadfully dense lump. It’s a lovely, basic loaf that fills the heart with warmth. Thank you for sparking lovely memories of family long gone.

Made it today as we were snowed in. I made the corned beef differently but still sliced nicely. Made it as an "open sandwich" - thicker slice of bread, butter, mustard, but covered that with a layer of baby spinach leaves, THEN the corned beef, then shaved some Irish Cheddar over the top. On the side: celery, baby potatoes, and carrots, arranged in a row as the Irish flag. Huge success.

I make a Guinness Rye soda bread OMG the rich caramelization of the crust is to die for, I created it by mistake but now EVERYONE who tries it....it elevates a corned beef sandwich to its Irish roots, I also make my drunken soda bread Irish Whiskey, Guinness & Rye it makes a VERY complex AMAZING sandwich bread for corned beef. I can't give away all my secrets granted this is one of my best creations

Hello McGrady! I love your channel, I have learned a lot. I take homemade Sourdough , put butter on both sides with freshly slice parmesan cheese , and Corn beef . Then I lightly Grease my 70 year old Le Creuset with olive oil and then pan fry it on med . Grilled Corn beef, parmesan sandwich.
