The best barbacoa is from cows head ask any texmex from south Texas buy a head wrap in foil 6 hours at 250 cut cilantro, onions and a hot sauce or chunky style salsa . Use corn or flour tortillas season with salt or pepper optional.

Hi Patty I hope you don't mind that I call you Patty, I absolutely love love love You your cooking style. I've spent the last 3 years of my life learning how to cook Mexican food. I adore your culture the people the food in the sense of family I've received from the Mexican community. I personally want to thank you for making my journey a little easier I even made minuto your recipe of course although I'm not a fan it didn't taste bad. I'm 64 years old and love cooking just recently retired and seriously thinking about moving to Mexico that's how much I adore the people and the food every time your TV program comes on I take notes on where I might go in Mexico whether it's Mexico City or Guadalajara. yes that type of cooking did exist but the banana leaves came after the spaniards arrival in fact they brought bananas in about 1550 to mexico...and goats and lambs weren't likely the original meat to be used because it made more sense for the spaniards to bring cows because they put out more meat and could also get milk from them..BUT PATTI i still love you...

This looks like a good way to do it. Sorry to be again adding my sour input from Tamaulipas, but when they do barbacoa in street tacos it's cooked without any seasoning, I don't even think they use salt. So when they serve it to you, you add the onion, cilantro, salt and salsa. And spit out the pellejo. Now, we did have friends who after the plain barbacoa was cooked, recooked it in a delicious salsa. Here in the US I use the slow cooker for the meat, with salt and garlic, then recooked in a skillet in a tomato garlic chili salsa. It's absolutely delicious.

Probably "Le Creuset", enameled cast iron.
The end result of the meat is spicy hot? Or just flavorful. Just wondering if it's kids friendly.

It was about two ribs worth, what I ended up doing was putting slits from the rib side and loin side. And dumped the puree in the cuts. When I wrapped in banana leaf, the leaf split in every way possible. So I tried to tie it like a roast. And put the rest of the package of banana leaf on top, in the pan. But it turned out bitter! And tasted like a leaf. Lol! But I saved the flavor. With just a whisper of onion powder, masa, paprika, garlic powder. It tastes all right, the fat from the rib eye was wonderful in the meat, but from mixing it, it turned out like a patè! Lol. Another valuable priceless lesson!

Barbacoa is one thing only, Beef cheek slow cooked. Not any other cut of beef, not any other animal. It is also not coated in all kinds of red sauce. This is seems did not extend to where Pati and Rick learned about barbacoa.
