“At a taco stand anywhere else, carne asada is grilled meat,” the Mexican chef Pati Jinich writes. “But in Sonora, a carne asada is the weekly gathering of friends and family, with the dish at its heart.”
Follow along as Pati Jinich shows you how to cook each component of the meal: the meat, the fire-roasted salsa, the refried beans, the smashed guacamole, and the corn and flour tortillas. Featuring special appearances by her two sons, who fill in as cameramen and taste-testers.

I wanna go there some day, have heard so much about the asada there and in Chihuahua. This looks totally legit. In Paraguay I've seen people wipe down the parrilla with onion too. Respect to my.Norteño brothers
I'm from Monterrey, Nuevo León and this is how we eat carne asada! Lightly seasoned, it's all about the meat. Flour tortillas, guacamole, salsa, it all goes in your taco... Even my cousin who was a vegetarian for a while would eat those tostadas with beans and melted cheese and then put lechuga rallada, guacamole, salsa y crema on top, that's how authentic to northern Mexico this is!
OMG! MY GIRL PATI! If y'all don't know her y'all sleep. She's the Mexican mom we all need in our life. She can cook and she's super loving to her family. Heyyyy Pati!!
Clean the grill with onion and fat pieces? Genius. Love Patti.

Look for "frijoles maneados" or also known as "frijoles puercos" that's the style used in Sonora and shown here. Fair warning, the beans will have quite a bit of cheese and the real recipe requires pork lard and butter, there's a reason there's lot of heart disease in this region of the country haha :(

pati, I have always enjoyed your cooking show. So fun to see your big grown up sons.
Used to watch on PBS, so enjoyable
Absolutely LOVE Pati 😍😍
I have platonically adored Pati for ages, & this only adds to my fangirl status. Thank you Pati, & once I can assemble ingredients will make! Kinda fond of my current recipe, but always eager to do better & eat better :-) I do not have access to a real gill at moment so will have to use cast iron grill pan over electric burners, so alas will not be anywhere near real comparison...
Aww, she seems like such a nice mama.
I love watching Pati cook! I wish she would cook for me, or at least get to taste her food, lol.
Wow, I just ate but I never wanted to reach out and grab something out of my screen so much!! YUMMMMMMM!
this looks so good!
Love it!
This looks yummy. I also like it simpler...grilled over charcoal, cilantro, onion, salsa and a modelo.
Having lived in San Diego and moved to NY recently, I started studying how to make carne asada tacos and burritos, since I don't have access to Roberto's or Santana's anymore. I prefer a street style Tijuana carne taco but I definitely got some tips from this video, which I will be using this week. I feel I'm very close to perfection. This biggest tip I can give to people who prefer street style tacos, is to cook your meat in oil that was used to cook fries. Just a ladle will do. I actually buy fries just to cook them in oil and use the oil, with no real intention on eating the fries. Unless I am making a California burrito.

Beans - if one can get real lard, not the nasty stuff - bliss! Also I am a huge fan of cilantro garnish - I know know many palates may not agree, but if you do not think cilantro tastes likes soap, add if you have some on hand :-)
More Pati videos please!
"If you can close your taco, your taco sucks" xoxox :-) Also Pati one of few people who entice me w flour tortillas, as I'm generally hard core corn unless it's 1 am & I have been drinking & best fake Mexican restaurant in town is still open serving huge flour burittos w optional shot of shitty tequila on side :-) And charging extra 75 cents for sour cream ( not crema), which only tipsy people desire :-)
@NYTCooking Hire this woman! :)
Do you marinate the meat prior to cooking ?
The toppings are more interesting than the grilled meat.

@@ejohnson3131 I am from Sonora. I know flavor changes within cooking methods, kind of charcoal, wood, etc... but I am explaining people from Sonora do it in charcoal or grass grill...this is not essential info for making carne asada... charcoal its more classic and a lot of people do it this way, but there's also a looot of people who do it in a gas grill too.....

I love Mexican food, but I find it to be _the_ most filling kind of food. I doubt I could eat even one of those tacos.
She’s the cutest woman ever!! I’m distracted lol 😍
No mesquite? That’s front and center in Sonorense Carne Asada. The taco truck around the corner from me is true Sonoran style, just cabbage on the taco served with salsas. No beans or cheese! Let the mesquite flavor shine!! Places that cook it on a plancha have to hide that fact with guac and other stuff. I cook skirt steak directly on Mesquite coals like Alton Brown. Really brings out the Mesquite flavor.
I can eat about 5,000 of these tacos! 🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮🌮

This is a good time for KZread to take a lesson from Facebook: There is real public anger against "Big Tech" companies and their "money-money-money" attitude. Quit bombarding people with unwanted ads--and then bombarding them with OTHER ads saying: "If YOU will give us money, we won't bombard you with ads anymore."
Its “combinado” not combinaro

I’m Mexican and I’m not insulted. It’s a bit over dramatic to imply her recipe disparages Mexican culture just because you don’t think it’s authentic enough. In her PBS show she travels throughout Mexico to learn and highlight regional foods, basically doing the opposite of “insulting” the culture. Her food reflects this. Thank you for the video Patti and NYT, more from her please!
I can’t understand a word she’s saying!
