Today we are making “Barbacoa” which is cooked slowly until fork tender. There are different versions of barbacoa, with variations consisting of the meat used, aromatics, cooking method, and even leaves the meat is wrapped in. This recipe can be made with goat but we are using beef.

Beef barbacoa recipe
Oven temperature: 350º F degrees
4 hrs cooking time or until fork tender.
3.5 lbs chuck roast boneless, beef
kosher salt, generously season meat
Black pepper, generously season meat
2 lbs chuck short ribs, beef
kosher salt, generously season meat
Black pepper, generously season meat
3 TBSP olive oil (brown the meat)
Seasonings
6 guajillo chilis, dry
1 ancho Chile dry, large Or 2 medium-small
1 pasilla chili, dry
4 chiles de arbol
1/2 medium onion, yellow
5 garlic, cloves
2 bayleaves
4 cloves, whole
1/2 tsp black pepper, whole
1 tsp oregano, dry
1/2 tsp cumin seeds, whole
2 TBSP white vinegar
1 1/2 cups chili broth
Salt to taste if needed @ the end
Banana Leaves
Small bunch thyme, fresh
Two hand fulls of avocado leaves, dry ( about 24 leaves)
1 cinnamon stick
6 cups of water

We just made this. We couldn’t find avocado leaves. My husband said “it was hands down the best barbacoa he’s had in his life” agreed it was really tasty! 🤤

It's almost impossible to find authentic Mexican food here so the only option is to make my own, and your videos have been really helpful and interesting. I've literally just arrived home after driving across town to the only dedicated Mexican grocery store in my city, after being inspired by your recipes. Ditto from Breckenridge, Colorado. But luckily we have a Mexican grocery called Dos Chiles in Dillon that had the ingredients. Making tacos for a friend who knee surgery. The struggle is real. :)
Madame, you are an excellent teacher. Your cadence is perfectly timed to the speed of proper instruction, you illustrate every move well in the video, and what's even more important is that you don't skip the tedious things other KZread channels just pass by without mention. For example, taking the time to show how an entire banana leaf is heated before use, and specifically telling people that it will take time and be as awkward as shown when trying to heat a giant leaf in a much smaller comal. It manages expectations well. And I like the way you show your respects to Mexico. I have bookmarked this video and I will be making this for my family EXACTLY as you have shown here. Thank you so very much for sharing your expertise with me. On a philosophical level, consider the fact that your work will literally become parts of all the people served barbacoa made from this video. Your efforts will create the cells which grow babies into toddlers, teens into adults, and supply new cells to replace those which continuously slough away from our bodies, both inside and out, and sustain our very lives. This, to me, has always been the most benevolent thing about cooking for loved ones. A person who serves this process is what we call a "Mensch." I sincerely hope your channel brings you healthy profits.

Subscribed to your channel. Like the person from Australia below, I can't find the authentic Mexican food I've been so lucky to have in my numerous visits to Mexico. Not many go as far to wrap in banana and add the avocado leaves, kudos. Thanks to your video's and ingredients via Amazon, this Gringo puts out some convincing barbacoa ;) Your chorizo recipe is another of my favorites.
It looks delicious. I will try this version of BIRRIA. Birria is meat cooked in chiles and water/broth. BARBACOA is meat marinaded in chile sauce and steamed in leaves.

This looks delicious! Just found your channel today and I'll have to add this one to my "want to try" list. Just have to get all the ingredients first. 👏🏼 Question though, have you tried this recipe via a slow cooker? I'm curious if it would work out the same there? Especially if I'm unable to find the banana leaves, not sure if that would even matter?
So thankful I've had mexican friends that considered me family and a brother in law that all could and loved to cook really well and feed me everytime i was around authentic Mexican food is amazing and yes I was smart enough to stay away from that mezcal no shots for me lol

This looks very similar to birria! I wonder what differentiates the two. The differences I do notice between the two (at least the way i've made birria) are the banana and avocado leaves. Everything else is very similar.

Birria is also considered barbacoa but is usually cooked in liquid like stew rather than being wrapped in leaves and steamed over the liquid. This recipe is kind of a hybrid.

Cooking now, very excited. Any uses for the extra sauce after you coat the meat? Should I pour some extra in besides adding 6 cups of water?
In my local Mexican market here in California, all they have is Pasilla-Ancho chiles. Can I substitute those for both the Pasilla and the Ancho chiles in your recipe?

@Richard Garrison: Yes you can cook it on the stove top. Two things I would suggest: 1. Add a bit more water, to cover the meat completely. 2. Cook on a low simmer, medium-low to low heat (depends on your stove). You will know its ready when the meat is fork tender. I would say check @ 3 hrs and if needed, let it cook longer. Hope this helps.

Hi there! I can relate. It tends to happen since a lot of people call different parts different names depending on the region or how knowledgeable the person is. Print a picture out and show it to them if you can, it may help.
