    This comment will likely get buried, but I have a few "lifehacks" that could make this more approachable. 1) Cut the tomatillos and peppers in half so you don't have to flip them 2) Use a hand/stick blender for the salsa, waaay less cleanup 3) use Chipotles in Adobo and blend that up with the seasonings before adding the meat, it'll become a type of paste that'll coat the meat better and that way you don't need to remove the meat from the pot, just shred it with a fork. 4) This works well with a salad, over rice or quinoa, or even just with chips (think of the nachos...) Fantastic video guys. My mouth was literally watering at the end.

    Ok ... I gotta say that Max's photography and editing, the merging of "slow-mo", normal speed, and "extreme-overspeed", is genius. But with no vocal track gaps through it all ... just incredible, just superior. On it's own ... the production draws me in. But, flashy as it is, it is not why I'm here. I have navigated here for Sam's cooking genius. This channel rocks! As I learn to cook ... I am entertained ... in the extreme. Thank you for that.

    I love watching your videos. I remember as a kid I would watch your show on TV. It not because it was the only thing I was able to watch. but it was because you made it look so easy and made me want to cook and you don't use all these fancy ingredients like in usual cooking shows.

    I'm blessed to be here in south Texas. Almost every grocery store in San Antonio sells beef cheek (cachete de res). We make barbacoa almost every weekend. Put it in the slow cooker Saturday night and wake up to the most amazing tacos Sunday morning! 😋😋😋 My grandparents on my mother's side are immigrants from Mexico. My grandmother taught me how to make it.

    Yeah when he says he is using bean broth you know he is going cheap. Hence the quotes of “Beef”. Is he really using beef. Or did he catch a stray dog he doesn’t like. Ha he gave himself away when he said and hand signaled us that he is using “beef”. It’s funny because I didn’t see him before to be that chap of a guy. His other recipes are spot on. Real chicken and beef. But this time he qued us in on this may not be real beef. He most likely cooks with stuff he could get and his wife is old school Asian apparently.

    So I have lived in Arizona for over 20 years and have not been able to find barbacoa like I used to get from the carniceria back home Chicago. I saw your video on how to make it yourself in a freaking instant pot. Well, what the hell might as well give it a try. OMG!! It's the same as back home. It's spot on. I can't believe it. The tomatillo salsa that was also on that video is killer. I roasted the vegetables on the Smokey Joe. It's sweet and smoky I added another jalapeno and Serrano to give it that extra kick. Freaking AWESOME!!! Thank you Sam😁👍👍

    Hey sam here’s why tomatillos are sticky via the internet. “You'll notice that the tomatillos themselves are sticky underneath the husk. That sticky stuff contains some chemicals called withanolides, which, along with the husk, help ward off insects.”

    @@sheng505 because some people have never used vinegar to clean their veggies...[answering your why question] because of different life experiences. You could have phrased it as an alternative listing feature and benefits format (which you accomplished in your example.) ex: "you could also use vinegar as a rinse, more food safe than soaps that may have antibiotic properties and harder to rinse.

    @@sheng505 I can certainly appreciate that it could be upsetting for you as soap & other chemicals/pesticides can be found in residual. Washing of some type is a very good idea, with vinegars being a great neutralizer, too. Thought I wasn't trying to be contentious with mine. Have a wonderful week.

I have a nephew Joey who is 11 and shares your diagnosis his gift os a very strong language skillset that allowed him to verbalize at a year 10 level in grade 2. Because of our abilities to reach around the world with the internet, there are groups of people who because of culture, finances or life experiences generally that wouldn't have chosen vinegar as a cleaning agent. It is a very food safe technique and in other circumstances a very tasty food topping, one that I enjoy tremendously. It is also a natural assumption that one makes (to assume that others would share our level of knowledge when in fact, certain conditions and circumstances lead us to very different life choices and experiences.) to wonder why someone else might choose another option when the rightest right there on the top of Your Mind.     Anybody who is complaining with the “thumb down” isn’t thinking. The meat closest to bone is the most flavorful. Of course the skull is made of bone. In Mexico, the meat is called Cabeza, which just means head. - Cheers Sam

    The tomatillo is actually from the gooseberry family. I make this salsa often. I like to roast my tomatillos, garlic, onion, and peppers on my Traeger, it gives it kind of a smoke flavor. Good job Sam. Keep it up!

    Bro this is the most legit Mexican recipe you’ve ever made. Every ingredient is spot on how my family makes it. You made the legit thing. Most “Mexican” restaurants just cook stew meat put taco seasoning and say look it’s Barbacoa! I’m looking at you Chipotle. Also some places call goat barbacoa and cheek meat cabeza. But to me this is it! Great job.

    Made this over the weekend and it was outstanding. I couldn't find beef cheek, but just used chuck roast meet and it was great. So easy to make in the pressure cooker. The tomatillo salsa is also outstanding. My next adventure is the Birria tacos. I'm waiting on Amazon to deliver my dried chiles tomorrow.

    I make pretty good bread pudding: stale pound cake, big cubes, toasted pecans, chopped, soaked in basic custard. Bake like usual. Meanwhile, do a reduction of cranberry orange relish with balsamic vinegar and just enough sugar to take the edge off. When the bread pudding is done, cut in squares and serve in soup or pasta bowls, top with the reduction, and pour cold heavy cream all around the bottom. That was my dessert last Thanksgiving.

    Anyone who does not have a pressure cooker, please go out and buy an electric one. I had the one Sam used in this video for about 6 years and it died recently. I now own an Instapot and I am very happy with it. Pressure cookers are incredible. The final products especially with meats and stews are off the charts.

    I freakin' love this channel. I like your energy, your recipes, and the funny dialog between you, Max & Chance. I had a crazy idea for a Not-Not week full of unusual recipes. But instead of just not-not tacos, you would do an entire week of different foods. Like, not-not egg rolls: with sloppy joe egg rolls, or pizza egg rolls, each with their own special dippings sauce. Then not-not nachos: with breakfast nachos made with huevos rancheros and spicy sausage. Not-not Po Boy's: with crunchy lobster Po Boys...While I was searching to see if you've already made an egg roll video. I was surprised that the one video I found from several years ago showed you using another mayo that wasn't Kewpie Japanese mayo. That shocked the sh!t out of me!

    Sam actually has very little knowledge when it comes to cooking. At best, his skill level is on par with a decent home cook. His poor knife skills,, the fact that he wears a ring while handling proteins, his poor mise en place, his poor cooking methods, his overall lack of safe food handling....all scream amateur. I have no idea how this guy managed to open 3 restaurants.

Why does he need to act like a pro and take off his ring? He's not in a kitchen or prepping food all day.. I think you are missing the whole point of his show and what he's trying to do.

    @@bredockschannel7331 Sam lacks a fundamental understanding of cooking. Period. He has no concept of building depth of flavor. He has no understanding of how the Maillard Process works. His mise en place is terrible and his safe food handling is even worse. He thinks the knife that he's using in this video is a filet knife. Its a boning knife....huge difference. His knife skills are absolutely terrifying. In a video not too long ago, he dropped food on the ground, picked it up and used it. When he was called out by many viewers, he made it a point in his next video to say that it didn't matter because he was home. No. He's holding himself out as a professional. Professional chefs do not use food that's touched the floor regardless of where they are. Do you think Doctors only wash their hands after taking a shit while at work? What makes this guy popular are two things: 1) he has a great personality and viewers find him very likeable and relatable; and 2) the people who watch his videos don't know any better.

    Sam: Let’s say you want to make Barbacoa 🌮 🌮 but you don’t feel like digging a pit, putting all the dirt on the side, burying the meat. Filling it back up and then letting it cook for hours and hours and hours, what do you do? Me: You pressure cook that Shit!

    I pureed the tomatoes with the red sauce that was dumped into my instant pot along with the dried chilis. 🔥 deliciousness to the max!
