Homemade shredded beef tacos (barbacoa) with fresh roasted tomatillo salsa are one of our favorite foods to make and eat. We have a serious love affair with these easy barbacoa tacos, but tacos taste good so no surprise there. This recipe in particular is heavy on flavor, gives us an excuse to break out the instant pot, and comes together really quickly! Oh and don't snooze on this roasted tomatillo salsa. It makes the dish and is better than anything you can buy in stores. You'll want to make extra to keep in the fridge for dippin those chips throughout the week.

FOR THE BARBACOA
3.5-4lb BEEF CHCUK ROAST
2 CUPS STOCK or WATER
JUICE OF 1 ORANGE
1 RED ONION
4 GARLIC CLOVES
1 TBPS CUMIN GROUND
1 TBPS PAPRIKA
2 TBPS CHILE POWDER
1 TBPS DRIED OREGANO
1 TBPS SALT
1 TBPS SUGAR
1. Cut Beef into 3" by 1" pcs, trim any excess fat or silver skin
2. Puree stock, spices, salt, sugar, onion, garlic, and orange juice
3. In an instant pot, or pressure cooker, combine beef and cooking liquid.
4. Pressure cook on low pressure for 1 hour, let pressure release naturally for 20-30 minutes
5. Pull beef out of liquid with slotted spoon and reserve 1-2 cups cooking liquid
6. Preheat large nonstick pan over high heat
7. Sear braised beef for 8-10 minutes, breaking up and shredding in pan
8. Deglaze with cooking liquid, cook down till glazed and well coated 2-3 minutes. Season with salt and lime juice if needed. Serve on tortillas with cilantro, onion and salsa
FOR THE SALSA
1 lb. FRESH TOMATILLOS
1 MEDIUM RED ONION
4 CLOVES GARLIC
2 POBLANOS
2 TSP KOSHER SALT
1. Large dice the onion, poblano and tomatillos
2. Peel and Smash garlic cloves, combine all veg on small sheet tray to broil
3. With broiler on high, roast tray until chawed on top and steamed tender.
4. Move contents of tray to food processor to cool for 10 minutes. Add 2 tsp salt
5. Puree to desired consistency, taste for seasoning, adjust with lime and salt as needed.

After a year, how does this GREAT video only have 18k view? KZread help this man out! This video has it all. A great recipe, great production, and it is entertaining.
I made these and they turned out wonderful even my very picky 6 year old was all about these... and I’ve been missing real tacos sooo much since I moved from San Antonio but these made me feel like I was home again.
I’ve made a dozen or more of your recipes and this takes the cake. Or the taco. I used a Dutch oven, added 2 chipotles in adobo, and then broiled the scooped beef on a wire rack instead of pan searing. By far my favorite meal I’ve ever made. Thank you!

I do similar with beef or lamb, except I throw it in the smoker first for about 3 hours @225F. Then into the dutch oven etc.

Been a fan for months and this was the first recipe I tried. It's mind-blowingly delicious. Couldn't score good corn tortillas so I resorted to regular ones, but my GF suggested making our own flour tortillas from scratch like in your shrimp taco video and they were game changing. I made this for dinner yesterday and absolutely loved it! I halved the recipe but decided to use the juice from the whole orange, and added a bit of Spanish smoked paprika. This is now my favorite Barbacoa recipe! (PS: it's even better the second night.)

If there is one thing I've found out about cooking Mexican food is that it typically is always better a day later.
Tacos de barbacoa have got to be one of the greatest foods ever. Not that hard to simulate in a modern kitchen, so you don't have to dig a big hole in the backyard. I love tacos. I have cooked barbacoa many times, but this week I'm doing them with beef cheeks. I have always used chuck roast before. I haven't figured out that portion yet, because I've never cook beef cheeks before.

a good tip about tomatillos my mom taught is to look for the yellow tomatillos the yellowies the better for salsa
Now this is a technique I can really use. I buy a lot of pork shoulder and beef chuck when it's on sale and I'm always looking for new ways to utilize it. Tacos are one of my go-to dishes in the warmer months.

I made these tonight (no tamatillo salsa though). They were great! Pretty easy too! We used some local pineapple salsa on them. Would recommend!

Nice recipe. I watched out of curiosity. I have my own recipe for barbacoa where I use lengua but if I can't get lengua I would definitely use this as a backup. Awesome job on the salsa. I definitely like that you know to roast the vegetables before blending them. Two thumbs up. 👍👍

I know this is older - there was a restaurant near me that did all kinds of tacos - more americanized like "chicken pancake taco" which had syrup on it or cheeseburger which was pickles, ground beef, American cheese and burger sauce! Its a neat idea and really good (when done right, at home)
Great recipe. As a mexican from the north, this is a spin-off of the classic northern barbacoa. I'll try it next time.

Great recipe. I guess you can't get them everywhere in the country but I like to use dried hatch chiles and maybe some chile de arbol. I love that hatch chiles come in every variety from mild to extremely hot.
Daaang looks so good. I will be making this for dinner this week. I’m fortunate to have a mexican market near by with fresh made tortillas and all the fixin’s. Definitely no Mexican-style nacho blend going near these bad boys.

This recipe was incredible! Love the taco series. One recipe I've always wanted to try is birria de res and consome with like, quesatacos. Could you adapt this method/recipe to use the pressure cooker and use the remaining cooking liquid as the consome? All of the other methods on youtube require mucho hours on the stove top. You could turn the liquid into consome, but you would need some more stock. So you could cook in about 2x the liquid and then strain off the liquid and clarify for the broth. I would experiment to see exactly how much liquid it takes but I’ve made posole that way several times. Thanks a lot for watching dood.

Hi Brian - I don’t have a slow cooker. I tried it in Dutch oven on stove and it came out nice. Can you please comment on pros/cons of braising on stove vs in oven vs crockpot? Love your stuff … incl those three BBQ salads.

They are pretty diff from regular tomato, a lot more tart, but actually yea you could regular tomato.
we can't get some of those veggies in Australia but ill track down a close eqiv because I want to enjoy this thang

Legit man, I’m making pressure cooker carnitas in much the same way right now, swapping the chilis for coke of course. Brown them under the broiler after. Next time ima do your recipe. 👌

Is there a flavor difference between the instant pot and the oven? I have an instant pot that I never use because I can't lose the feeling that it just won't be as good
The taco joint here in town uses a whole beef head for barbocoa
Brian, I’m curious…. Why chicken stock?
In a couple of your videos now you heat a non-stick pan to high heat...this goes against everything that I thought I knew for how to preserve the non-stick-ness of a non-stick pan. Do you have special pans or just use a particular pan for when you need to heat it HOT so to preserve the others?

SUPER SUPER high heat will degrade a non stick after a lot of rounds of abuse. But I go for it usually without harm
Shrimp tacos... omg every time I go to Mexico, I swear I eat more than 20 shrimp tacos. Would love to know how to make some great ones cause they're sooo expensive in the states. Gonna try these barbacoa tacos this weekend for my parents

A million years ago I was in Arizona and i had Sonoran tacos for the first time... A few weeks ago I tried it on my own. I got the cactus pads at that mexican grocery store near Don carlos on cherokee. It was about 75% dope. I could've done better. My issue was that I used chicken instead of fish or beef. Any thoughts on trying a Sonoran style Taco on your channel?

Joseph Putnam I hadn’t thought about it. I’ll have to check these out. The only Sonoran food I’ve had is the “Sonoran hot dog” which is a bacon wrapped dog with all kinds of torts toppings. It’s pretty amazing.

5-6 days. You could try to freeze it but it would probably be a little bland after.
Fans, I realized right away that i can’t watch his channel late night, nothing good is open! I am so hungry now and heading for the closest Mexican restaurant for some tacos or fajitas. Bueno video.

Barbacoa - "barb" meaning beard/hairs (whiskers for the animal) to standing in the que (coa) which is a tail. Barbacoa literally means cooking the animal from head to tail in the ground. Sound just like authentic BARBACUE! OH, hold up.....it IS! LOL Barbacoa means BBQ. NICE!
