Pasta Grannies | Discover 'Maritati' or married pasta from Puglia

What do you get when you mix 'minchiareddi' with 'orecchiette' pasta? Married pasta or 'maritati'. 89 year old Nina shows us how to make this classic dish from Puglia.
Ingredients (enough for 8 or more people):
1kg semola rimacinata flour
1 egg plus approximately 500ml water
pinch of salt
For the condimento:
1 kg prepared cime di rapa or broccoli
2 whole red chillies, chopped (or to taste)
2 garlic cloves, chopped
3 salted anchovies, bones removed and chopped.
Olive oil for sautéing

    Dear Pasta Grannies team, congratulations for your remarkable effort to keep these recipes alive! A small mistake in your comment on this recipe, the pasta is cooked in the water that cooked the Cima di Rapa (or the broccoli), not in salted water. This way, the pasta picks up the taste of the vegetables.

    Just some observations... I love how each of the grannies has their own specialized pasta board for rolling out dough, not to mention special pasta-making tools, and also how immaculately clean their kitchens all are, it's amazing! I could scrub for days and not get my kitchen that clean!

    Vicky, another thing i love about this show is how the younger family generation takes in and helps take care of their older aging family generation, this is not always the norm in some cultures. I am irish and i am 55 years old and i am fortunate enough to have both of my parents still alive. I and my 2 sisters and our kids do as much as we can for our parents/grandparents, my ma is 79 and my pa is 80

    it is nice to have multiple generations all together...............but the old ones don't expect excesive attention and don't suffocate the young generations !..........they are a plesant companion !

    I tried making the minchiareddi and orecchiete and it came out great. Excellent recipe for maritati too. Couldn't figure out what fish she used or whatever a "cima di raca" might mean.

    This looks just so delicious - and she's adorable. I'm Italian on my mother's side, and my Grannie handed down a few recipes to me - but this is a treasure trove of love. I feel close to her, 20 years gone now, when I watch Pasta Grannies. Thank you so much for preserving this amazing knowledge.

    "She adds 1 egg, because her mother always did!" My African-American mother made mac and cheese with spaghetti rather than macaroni. More of an egg custard with spaghetti and hunks of (not shredded) sharp cheddar on top, dotted with butter. Plus a generous sprinkling of black pepper. I never questioned her and now I make the same, Mama's was better, it had har secret ingredients of love and mama magic, but mine is close. If Mama was alive today she'd be the same age as wonderful Ms. Nina, the granny in this video. I'm convinced my Mama would find this Mama charming and would try to make this dish... in her own way!

I discovered it about 2-3 weeks ago and it has been a great mood enhancer. Things are turbulent in the USA. I am grateful that in this moment I am healthy and safe. And I have "Pasta Grannies" as a reward teaching elementary students all day on Zoom. The kids are wonderful and lift my spirits, but my granny time soothes and relaxes.

    Whenever I travel I purchase local kitchen tools and implements. On my last trip to Italy, one of the things I brought home was a set of six knives purchased in a flea market in Umbertide. I don't know why I had to have them, as they were similar to very inexpensive steak knives one would find in the USA. I love, love, love these knives, and when I watch your videos, I notice that they are very commonly used in Italian kitchens. Many of the Grannies use them! The neighborhood in which I live has a plethora of ethnic owned grocers. Some small mom and pop shops, and others are huge supermarkets. There are Mexican, Polish, Greek, Italian, Indian and Pakistani, as well your typical American "chain" markets (which I rarely, if ever frequent). During my last few trips to the Italian owned markets, as well as the Greek owned markets (which carry imported food from all over the world) I have notices these knives showing up more and more. I know this seems like an odd thing to notice, or write an entire paragraph about, but it simply struck me as interesting. And, obviously so, as I am waxing poetic about common cutlery! Thank you for the videos, and for keeping the Grannies' recipes and legacies alive.

    Awesome video and great recipe. I actually gave it a try and it was delicious. It's way more difficult to form the pasta than it looks in the video and probably takes years of experience. But the effort is worth it and everyone enjoyed the home cooked meal a lot. Thanks for the great inspiration.

    Yummm I will try this for sure... probably use broccoli Rabe because I have never seen turnip green in stores here. I love any greens. 😃❤

    She says cime di rapa, or "turnip tops". In american it is called broccoli rabe, yes. She also says that broccoli is a good substitute if cime di rapa is not available. Hope you enjoy making the recipe. :)

    Cima di rapa is spicy and strong. Broccolo is unflavoured respect cime di rapa. You can use, alternatively, Mustard plant, cultivate or wild (brassica nigra, or brassica alba, or brassica arvensis). Can also use wild chicory, or the basal rosette (?) of the new plants of papavers, or other wild "brassica" types.

    Hi, the "orecchiette" have a container shape while the "minchiareddi" have the shape of small penises. The word "minchiareddi" literally means "little cocks"

As a neurologist, I have many very old patients: you would be surprised (well, maybe not) how witty some older grannies are, and how do they love dirty jokes!
