96 year old Anna makes Tortelli d'erbette for sunday lunch | Pasta Grannies

96 year old Anna still enjoys making pasta for her family, who live in London. Anna was born, grew up and got married in Italy before coming to the UK, bringing her cooking traditions with her. Enjoy her recipe for tortelli d'erbette, ravioli special to Parma.
For the pasta: 500g 00 flour, 5 eggs and a pinch of salt.
For the filling: 250g cooked chopped spinach or chard, 250g ricotta cheese
1 egg, about 100g Parmigiano cheese
1 teaspoon salt, 1 pinch of nutmeg and, Anna's addition, a pinch of cinnamon.
For the sauce: one red onion, diced, 100g dried porcini mushrooms, rinsed, then soaked. Keep the soaking liquid. 200g chopped chestnut mushrooms. 2 generous tablespoons tomato concentrate, water, a little milk (thicken it with some corn starch for a more sturdy sauce), salt and plenty of black pepper.
PS, Anna appears in the line of the lyrics of a Dire Straits song - she's the waitress in Wild West End, Rachele and viewers told me!

    These ladies always are so lovely. There is just something so precious of them that i can't explain but it's a feeling like i want to be a part of their family so i can learn how to cook the food and how it tastes. I don't know why but their smiles can make anyone happy.

    This lovely family comes from near Borgo Val di Taro, which is about one hour's drive west of my father's area. All are in the Italian Apennines, and this dish is also something we make, although we usually use Swiss Chard or bietola, which I prefer to Spinach. Cooking with dried porcini mushrooms is heavenly. The taste is to die for. You can also see the typical use of some milk in the sauce, the lack of garlic, the sparing use of tomato product, and how the pasta is "dressed" with the sauce, not swimming in a vat of it, all very Northern Italian style. That sauce is also delicious on layered polenta, or gnocchi, or you could do a meatless lasagna with it and alternating besciamella. I would also love to see her make gnocchi.

    That little girl reminds me of how engaged I use to be when cooking with my late mother. She instilled a love of food and cooking in me that impacted me so much I became a chef and now have a restaurant. Love to see this. Gonna definitely try out this recipe. ❤❤❤❤

    @@pastagrannies Hee, hee I would travel from any direction for a plate of that wonderful ravioli!😉 That is interesting regarding the Italian community in Barnett, My Italian family were from the surrey area and the local graveyards especially Chertsey are full of Italian named headstones but I think they have mostly moved on now, although my cousin still lives there.     I am a huge fan of your channel. Thanks a lot for all you do. It's realy fascinating, it's a true magic. This way all these recipes keep going. One interesting thing I've noticed which is in common in Italy and Ukraine (my native country, the country I live in now) - both Italian and Ukrainian grannies had to cope with really hard times and a terrible poverty, and managed to create really exquisite recipes that worth restaurants. They had no practice with big chefs, no education, just a few ingredients and the necessity to feed a hungry family. It admires me a lot. Very strong and beautiful women, different contries, very much alike destinies

    What a lovely vignette of generations happily working together.From the experienced Anna down to the little great granddaughter, head on arms taking it all in. Cracking dish too. Not been many good Penny buns [Boletus edulis] yet this year so far. But I love it when there's enough to slice & dry to see me through the year. But I've had a few for the pot. So like Anna's choice of ragu for that ravioli filling. Feeling ravenous from watching. So happy to see the traditions being carried on in her adopted country & passing them on to her family to enrich all our lives.

    Town's name is Albareto, not Bareto. She is a " Higlander " parmesan, in fact dresses the tortelli with mushroom sauce, where a " Lowlander " parmesan would dress them with butter and more cheese. The spice in the stuff is nutmeg usually, not cinnamom. I might try her twist.
