One Pot Lentil and Rice Recipe Inspired by Lebanese Mujadara 🇱🇧 Easy Plant-Based Recipes for Vegans

This recipe is inspired by Lebanese Mujadara and a combination of a few Mediterranean recipes (however, I have added Ginger because of its various health benefits, especially with digestion).

▶️ RECIPE INGREDIENTS: (4 to 5 servings)
1 Cup / 200g BROWN LENTILS ONLY (washed and soaked in water for at least 4 to 6 hours (or overnight) until the lentils are very tender)
1 Cup /200g BASMATI Rice (thoroughly washed/soaked in water for 20 minutes)
3 Cup / 400g Chopped Onions - 2 medium size onions (430g with skin on)
1 Tablespoon ginger (very finely chopped)
1 Tablespoon garlic (very finely chopped)
3/4 Cup Strained Tomatoes / Passata / Tomato Puree
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/4 to 1/2 Teaspoon Cayenne Pepper OR to taste (Optional)
Salt to taste (I added total 1+1/2 teaspoon of pink Himalayan salt)
2 Cups / 475ml Water
Garnish:
3/4 cup / 70g Parsley (finely chopped)
Freshly Ground Black Pepper to taste (I added 1/2 teaspoon)
Lemon or Lime juice to taste (I added 1+1/2 tablespoon lemon juice, I like it a bit sour)
Extra Virgin Olive oil (I added 2 tablespoons of organic cold-pressed olive oil)
▶️ METHOD:
✅👉 USE A WIDER POT TO COOK THIS DISH (this will cook the rice more evenly and prevent it from getting mushy).
Wash and soak the brown lentils for at least 4 to 6 hours (or overnight) until the lentils are very tender. Thoroughly wash the rice until the water runs clear to get rid of any impurities/gunk (it's an important step so do not skip it). Soak for 20 minutes.
Heat a pan, add cooking oil, onion and 1/2 tsp salt. Adding salt to the onions will help release water and help it cook faster. Fry the onion on medium-high heat until it starts to caramelize. Once caramelized, reduce the heat to medium to medium-low heat (depending on the heat of your stove) and add finely chopped ginger and garlic. Fry until onions are nicely browned (be careful not to burn the onion).
Once the onion is caramelized, add the strained tomatoes/passata and spices. Give it a good mix. Add the soaked lentil and rice, along with salt and water. Cover and bring to a vigorous boil. Once it starts boiling, reduce the heat to low and cook for about 25 to 30 minutes.
Uncover and check to see if the rice and lentils are cooked (it should be cooked by now, if its not, cover and cook it for a bit longer). Now continue to cook UNCOVER for another 1 to 2 minutes on low heat to get rid of any excess moisture. Turn off the heat.
Add parsley, lemon juice, black pepper and drizzle of olive oil. Mix very gently, the rice is delicate at this point and we don't want to break it. Cover and let it sit for 5 minutes before serving (for flavors to blend).
Stores well in the fridge for 3 to 4 days. It's perfect for meal planning.
▶️ IMPORTANT TIPS:
👉 Soak lentils until they are very tender. The soaking time depends on the quality of the lentils. Some brown lentils are drier than the others and therefore need more soaking time
👉 How to know if the lentils are soaked well? You should be able to cut a lentil piece with your nails, effortlessly. If not, then soak longer
👉 It's really important that the lentils soak well. The reason is to match the cooking time of lentils with the rice
👉 USE A WIDER POT TO COOK THIS DISH (this will cook the rice more evenly and prevent it from getting mushy)

    Everyone prefers something else. For me the music is disturbing, beacause it is emotional, and I find it inappropriate for a cooking video. I had to watch it on mute. Also, when I cook/prepare ingredients, I cannot look at the video nonstop. I prefer when the cooks are saying what they are doing so that I can do what they say without actually having to have my eyes glued on the video the whole time. And I don't care about photography or how beautifully it is filmed. I just want to cook a meal, I didn't come here for a cultural experience. Just saying :D

    I like that the ingredients and quantities are listed and that the photography is good but I would much prefer to hear the instructions, makes it much more accessible for people with visual issues and for those of us trying to cook along. I will never make this because I’m a beginner cook and I need to hear the instructions while I’m following. Unlikely to subscribe.

    The combination of beans and/or peas with grains like rice and quinoa can give a person all 9 essential amino acids needed for building protein in our bodies. Unfortunately, some of these amino acids are in limited quantities. Spinach and quinoa have all nine of the amino acids but still need to be eaten in enough quantity and combination to receive proper nutrition. Fortunately it’s not that difficult! It doesn’t require a college degree in nutrition. There are lots of sources (online, nutrition booklets, library books etc) to guide individuals in making good food choices- and save money while improving their diet. I am much healthier since getting off meat and reducing my dairy intake. I will eat it occasionally for special occasions but I’m convinced it’s an inferior protein source- too much fat and cholesterol. My body makes plenty of cholesterol on its own- over 325 while on a strict vegan diet!

    @Jarl Kilduff wrong . I have been vegan for 36 years and have no deficiencies. At 58 i can still cycle 40 miles and skateboard on a 12 foot high vertical ramp .

    In my hometown in Mount Lebanon, we don't start with onions,but fry them in their chopped long shape and add it on top of the plate. Also, we use ground Cumin only. Served along Greek yogurt fresh from our village is a delight. But I like this recipe too, gonna try it. Thanks for sharing.

    I'm totally with you on that, dont understand why some people waste time showing us how they're chopping every last bit. Or doing way too much talking at the beginning and still dont show the actual recipe on screen.

    This is such a popular and easy dish in India as well. It's called as Khichdi. There are numerous variants of it with the kind of spices you can use in it, with or without onions, Kind of lentils used, etc. It's usually given when you're sick as well and it's amazingly comforting!

    One major reason public health in India is so bad is this sort of food. Rice and lentils are best avoided. Lentils are full of anti nutritients. Phytic acid for example. Phytic acid blocks the absorption of iron, zinc and calcium.

    @@user-pi4cf6fj7b depends on the spice honestly. Something like paprika burns very easily, others change their aroma a bit depending on how long it fries for. Just use your sense of smell and keep an eye on the color

    Tip for everyone, put lentils first, cook till tender, then add the rice. I cooked this dish following everything to the letter and there's no way the lentils are going to cook in the same time as the rice.

    Consider using a harder rice, like basmati brown rice. However, even with that, I would still cook the lentil about 5 to 10 minutes longer than the rice

    While visiting Jaffa a couple years ago, I remember buying a bag of mixed rice, lentils, spices and - I think - dried onions at Suk HaCarmel. After cooking, it turned out to be a really nice and hearty meal, but I could not for the life of me remember what was it called. Now, thanks to this video, I believe this might well have been this very dish :)

    I have tried your recipe and found it so delicious and easy to prepare and cook. Lots of flavour through each bite. Didn’t have brown lentils in the shops or my nearest supermarket however, I used orange lentils which is just a best! I soaked it over night. I used only half a spoon of salt and coriander; due to sodium and having Dyalisis 3 times a week. Again very tasty and quick. I also lightly fried chunks of quorum to compliment the lentil and rice dish for the grandchildren. I suggest if anyone is going to try this recipe do all the preparation before you start cooking.

    It is a delicious recipe. I use yellow lentils and it gives a different flavor. In Egypt, we make the recipe with brown lentils in some cities, but the coastal cities we make the recipe with yellow lentils ... Thank you very much for the recipe.. 🙏🏽🙏🏽

    @@lastoftheurgents1965 Whit rice and bread are highly processed and so are depleted of many heart-healthy nutrients in addition.... have a high glycemic index, which means they can make blood sugar levels spike and increase hunger, leading to overeating.

    I prepared this meal last night for my husband and it was very tasty. Made a slight adjustment, I didn't have ginger and I also used tomato paste in place of the crushed strained tomatoes. I appreciate your effort in sharing these recipes with us. I am thankful for you.

    I'll be making this dish this afternoon and will be bringing it to the lake tomorrow morning. I have been making a version of this delicious Lebanese dish for years, but I love the idea of adding ginger!, the strained tomatoes and the juice of a lemon at the end... what a great idea!     So easy and yummy! I made this, I of course added more spice, cayenne pepper. And I also added chopped dates at the end because I like the contrast of sweet and spicy. This is one my top cooking channels I use regularly…thank you for not taking 20 minutes to show one recipe and without all the incessant talking and showing of cutting the vegetables… Your videos are so easy to watch. ❤

    i just bought everything and cheap not so much the first time as I needed the spices, but now its in the house so I hope I like this as I one bag of lentils is 2 cups so I can make this again. Soaking them now.

    @@cherylzaccone9685 I use these spices alot so I buy them in bulk from a local Asian grocery store for pennies compared to supermarkets. I get four cups out of a bag of lentils @ $3 a bag, so less than $1 per serve. I buy 5kg of rice at a time for about $11 which works out to about 50c a cup. I grow my own coriander and parsley and can usually access free lemons so for me this dish is very economical. I hope you enjoyed it as much as I did.☺️

    In Bangladesh, We call it 'khichuri'. But here we use 2:1 ratio for rice and lentil. It gives a nice balance of carbohydrate and protin. And also tumeric is very essential in this dish.

    I tried it and it's amazing. I didn't have parsley and used a different type of rice but it was really good. Not as tomatoey as I thought it would be but really good. Fresh and warming.
