Nyonya Pan Fried Fish in Preserved Bean Paste Sauce / Ikan Goreng Chuan Chuan Nyonya

Ingredients for 4 person:
• 4 Blocks Mackerel Fish (Seasoned with a little salt).
• ½ Cup Coking Oil.
• 10gm Shredded Ginger.
• 5-6 pips Garlic (minced).
• 2 ½ tbsp. Preserved Bean Paste.
• 1-1 ½ tsp Black Soy Sauce.
• 200ml Water.
• Salt.
• Sugar.
Methods:
• Heat up oil in heated wok.
• Once oil heated up, gently place the mackerel fish blocks.
• Fry and turn till it’s ¾ cook then set aside.
• Remove some oil, then fry minced garlic & shredded ginger until slightly brown.
• Add in water, black soy sauce, salt & sugar according to taste.
• Once sauce getting thicker, add in the fried fish.
• Simmer for 2-3mins then remove from wok.

    Hi Aunty, in the written recipe, it is not stated when to put in the soyabean paste.
