Ikan Kuah Lada Nyonya / Mackerel Fish Cooked with Spicy Pepper Gravy

Ingredients for 4-6paxs:
• 5 pcs Mackerel Fish Block (stingray or pomfret fish can also be use)
• 200gm Thai Shallots
• 1 Cube 2”x1” Shrimp Paste
• 6 pcs Candle Nuts
• 4 Stalks Lemon Grass
• 5 Pips Garlic
• 1 Thumb Size Fresh Turmeric
• ¾ tsp Grounded Pepper
• 1 tbsp Tamarind Paste
• 900ml Water
• 1 ½ tsp Salt
• 1 tsp Chicken Granule
• 3 Medium Size Brinjals (Sliced into length wise)
• 100ml Cooking Oil
Methods:
• Blend/grind the spices.
• Stir fry grinded ingredients until fragrant.
• Add in Tamarind juice, salt, sugar, chicken granule & leave it to boil few times.
• Add in Brinjals till ½ cook.
• Lastly add in fish blocks & leave to boil for 6-8 mins till fish are cooked.
• Best to serve with sambal belacan or salted eggs.

    Another lesser known Peranakan dish. I love this! I learned too cook it at 16yo. I sometimes use chicken because I like it with chicken too.

    As a Singaporean, now living in the U.S, I miss all this type of cooking and regret not learning how to cook Singapore home cooking, as it was easily available there, with different ethnic restaurants and hawker centers! Now, ownself has to cook lah! Will definitely make this, as it is one of my favorites! How about pork ribs soup with salted vegetables? Another one of my favorites! Thanks!
