Ayam Buah Keluak / Spicy Chicken Meat with Buah Keluak

Main Ingredients:
• 10 pcs Buah Keluak
• 600gm Chicken Meat
• 100gm of minced Chicken/Prawn(*optional-to be pounded with buah keluak flesh)
• 100ml Cooking Oil
• 2 ½ Cup Tamarind Juice
• 1 ¼ tsp Salt
• 1 tsp Sugar
• 5-6 Kaffir Lime Leaves
Spicy Paste Ingredients:
• 12 Dried Chili
• 12 Shallots
• 5 pcs Candle Nut
• 1” Thumb Size Turmeric
• 1” Thumb Size Galangal
• 2 Stalks Lemon Grass
• 1 Cube 1”x1” Shrimp Paste
Preparation of Buah Keluak:
• Wash & brush the shell.
• Soak in water for 5-6 days, rinse & change water every day to avoid unpleasant smell.
• Before cooking, need to cut or crack around the small opening section to remove the slightly bitter flesh using teaspoon, sniff every fruit flesh for any unpleasant odor, discard the ones that’s smelly if any.
• There are 2 ways to prepare the filling:
1. Some prefer the original taste, just pound the flesh & add some sugar & salt then restuff it back to the shell.
2. Some prefer to add minced chicken or prawn, some salt & sugar then restuff back to shell.
Cooking method:
• Heats up cooking oil, add in paste & stir constantly till its fragrant & oil appeared.
• Shred & add in kaffir lime leaves.
• Add in chicken meat, stir till the meat slightly shrink.
• Add tamarind juice, salt, sugar & stir slowly till its boiling.
• Finally add in the stuffed buah keluak& leave to boil several times till meat is tender.
Ready to be serve.

    Thank you for sharing the recipe. Keluak is widely planted in Sabah. We use the buah keluak to make fermented fish or meat called BOSOU.

    Buah Keluak is relatively difficult to obtain in Singapore. But Iike it! Really a specialty dish, a treat for special occasions. Thank you for sharing, Aunty.

    Kamsiah manyak2 Tachi. This video was a trip down memory lane for me. Gua rindu makan mia mama ayam sama tulang babi buah keluak. I remember every time she wants to cooks this dish for the extended family, all the cousins will need to gather early in the morning to korek and tumbok the kernels! Habis masak takleh makan... mesti nantikan petang kemdian boleh makan aiyoh! It was hard to wait then as a kid haha!

    Thank you so much nya, I love this dish like crazy but didn’t learn how to cook from my mum. Now at 70 I saw your video so, that’s how the way to cook it.     Hi Ekta. I had replied to your note, but KZread probably thought that I was a bot (because I pasted a link in my response) and deleted it 😅 Long story short: try raw anchovies (you can pound them into a paste), or kombu water, if you wish to try a vegetarian option. Good luck, and have fun!
