the first one is called Sorrentina and it's not made like that, it's actually made with hoax's mozzarella and severd already mixed because you are supposed to put the hot pasta on the mozzarella so it melts more easly. Sorrentina was born because of the necessity to reuse old mozzarella who became too hard to chew. It's a high calories dishes who was served to the field workers in South Italy. oh and I love how he called San Benedetto a fancy bottle ~an Italian

thats what we do best take something thats probably more typical or just has some general origins, make it expensive and sell it to americans

@NonsensicalSpudz about that there's nothing much we can do apart from explaining to people how it should be done. Usually I find myself arguing in the comments on ig because they just don't get the importance of typical dishes. Once I saw someone put cheddar on parmesan and the comments were all "there's not a right way to do it" "everyone can do it how they want to" and I realized that people all over the world eat a fake version of what I eat daily. I love my nonna's food, I love eating and I want to make others feel the happiness of it. It's amazing how old foods can be reused and make a traditional helathy dish out of nowhere

10:30 from what I know, I'm pretty sure fatty char-siu is supposed to be better (idk, it's the type served in kinda high end places) also idk why, but the 新兴隆 accent sounded pretty good (I know the middle word is different..I used pin yin and I forgot the traditional CN keyboard)
