Gonna go ahead and say he 100% has experience in a professional kitchen. like 90% a trained chef with a solid sense of humor. His cooking technique and cutting knowledge is well above average. He's a cooking version of Mehdi Sadaghdar.

@@TheTaurusbg Superheating. Basically the broth did not have any good places to produce bubbles but it was at boiling temp so when the whisk was added the broth had places for bubbles to form and they formed all at once.

To be fair, it looks like a normal family cook vid, and if you’ve ever made a bone broth, they tend to look like that, and even then, I have faith this dude can cook, being that he’s either idiotic, or smart enough to substitute ingredients, and the fact he can actually use a knife. Stating he can at least cook.

9:11 The broth exploding looks like what happens with superheated water. This happens when the water is at boiling temp, but there are no rough edges on the container for bubbles to form on (ie highly glazed surface). Since there are no bubbles to break past the surface of the water, when the water is disturbed (like adding powder or a tea bag) it suddenly comes to a boil. I hear adding an object, salt, or sugar greatly reduces the likelihood of it happening, but after seeing the broth react like that uhhh It also happens in the microwave too so be careful folks

I’ve heard not to heat water in a measuring cup or smooth bowl too long in the microwave for that reason. Not sure what the chances are of that actually happening, though.

@@timmah2723 it's pretty easy of it gets to boiling temp. you can avoid without altering it by dropping in a toothpick or the like into the water. Anything with a surface that isn't polished will do.

Yes! Just started watching him a couple days ago, and came to the conclusion that he's really good at cooking but shows to be a little bit lazy sometimes and makes people think hes bad at cooking. That or I am really a fool. 😂

So I think what happened at 9:17 is that because your broth was in a glass pot, it became superheated, meaning it was heated past it's boiling point but did not boil; The glass pot was likely too smooth for the water to start boiling (to freeze/boil, water needs a nucleation point: either a particle or disturbance). The addition of the whisk or it's movement might have introduced a disturbance (a imperfection on the surface of the whisk or a bubble created by its movement) which caused it to suddenly boil.

Man your voice is so nice and soothing i could fall asleep watching your videos because it relaxes me so much not because its boring!!!
My tip for deshelling the eggs is to crack off both the top and bottom first, then carefully de shell a line to connect them. The rest of the shell should come off pretty easily then, most of the time in one or two big pieces ✌️

This is pretty much my experience with Tonkotsu from a few weeks ago, tons of time, and parts of it make a huge mess, but the outcome was delicious. I used a pressure cooker to speed up the bone stock which helped.

@@wbsdfm I've seen that using an immersion blender in the bone broth makes it white. It's the agitation of the fat and collagen that makes it white.

A friend and I attempted to make Tonkotsu Ramen about two years ago now, I was visiting him and he lives in a very small town, it was hard to find most of the ingredients we needed, so we had to improvise most of them. In the end, everything looked fantastic, and the picture we got to take of our bowls were gorgeous. Then we tasted it, and we were both incredibly disappointed. It wasn’t even bad, it was just flavorless. It didn’t seem cohesive in any way, everything stood by itself, and nothing incorporated the way we had hoped. It was an incredibly disappointing experience. We went out and bought slushees then moped about by the river for a bit before returning home after spending nearly a day and a half going out to buy ingredients, prepping, and cooking. Moral of the story, try and stick to recipes, or know what you’re doing if you’d like to venture out lmao

.... you gotta taste stuff as you cook, specially if you improvising. If your soup was bland/flavourless, your tare was most likely not done properly (salty enough). A good tip for the noodles is to not cook them completely in water. Cook them till the starch or the flowery surface is gone and then let them cook the last 10% in the broth. It could be that your bone broth was also not reduced enough ence why the soup could end up tasting and feeling watery. Hope it helps in a future endeavor.

An honest answer to your whisking broth question; glass is very smooth and doesn't allow for nucleation points very well. Basically, the water can't boil because there aren't enough rough spots for bubbles to form. When you put the whisk in, it gave the super-heated water a rough surface from which it could finally boil. It caused a chain reaction and boom, boil-over.
