if you're interested, there's a great mini docu done by the channel "life where I'm from" where he follows a guy who runs a hole-in-the-wall style ramen show in Tokyo. It's so much work! Very eye opening too. But it makes more sense. It's a ton of prep ahead and overnight stuff to make, but the final assembly isn't long. Uncle Roger is right (of course) that Ramen is definitely not a dish really worth making at home. It's a true restaurant dish.

It's complex but scales pretty well. Making fifty litres of broth doesn't take that much more time than making a litre, same with basically all the ingredients. Also helps to have the equipment for it. Some dishes don't scale as well, like when you're looking at those Michelin star dishes with fancy plating, all those little pieces cost the same amount of time for someone to put them on each plate, and there's a lot of them.

My dad actually found that 6 minutes was the best time to cook soft boiled egg

As an Asian, I am constantly blown away by how much Uncle Roger knows of recipes from different Asian cultures

It gets me every time too. There are times he couldn't do it. When he was cooking with the cute Malaysian chef who was unapologistically about his dirty cooking jokes. Uncle Roger got nerfed lol. Very cool episode.

Sorry for second comment but yeah. French cooking is all about building flavour and colour. Many ppl who are educated in French style cooking are looking for that developed rich dark colour but obviously that doesn't apply to other cultural cuisine! It is amazing to achieve that creamy white opaque clean colour of the tonkotsu broth!

@@alecotincknell2690 A person doesnt have to be a chef to get cooking methods right, he just need to be a food lover who reads lots of cooking books. And so far, what he was roasting was all correct so far. Im a chef also and i dont really need you to trust me. Just go google cooking recipes. :)
