Great recipe love it. Just a helpful tip for you. Get some of those black gloves that are used for cooks that handle hot foods. They use them for plating or just handling any hot foods.

For all the mushroom washing haters, Alton brown already disproved this. He weighed his mushrooms, then washed them and patted them dry. They weighed pretty much the same. Washing dies nothing bad to mushrooms unless you pile dirt and poop.

This is a great recipe. For someone who wants to do low-carb you can use almond flour. Also a tip for handling hot foods is use those black gloves that cooks use especially for foods coming off the barbecue, etc. They are designed to handle hot foods after they have been cooked and used for plating, etc..

Cut them into 18 balls? I think you meant 16 if you're halving every step. 18 would require cutting it into half, then thirds, and each of those into thirds. Doable, but 16 is much easier.

Unfortunately for me, I'm a texture guy when it comes to food. Just the other day, I had King Oyster, and it was a bit too rubbery, but that doesn't mean I'm giving up on them. I did marinade them overnight, so my question was, did I cause it to be rubbery by marinating for too long, or is it naturally that way? And what cooking methods can I use to make them less rubbery?

3:51 Wait, eighteen pancakes? By dividing in half repeatedly? You can get 16 or 32 that way. How about half, then each half into thirds, then each piece into thirds again. (Actually, I see that you did make 16.)

Let's face it, mushrooms don't taste like duck. What you are tasting superficially is the texture of the mushroom depending on how you cook it and the sauce it is slathered in. I think it can be a problem for those transitioning to plant-based when they hear that something is supposed to taste like fish or duck or whatever, but then they are disappointed. It is better to call it a delicious, asian mushroom dish with flavors inspired by a duck pancake than to imply that someone would not be able to tell the difference between mushroom and duck. You can infuse different products like tofu or soy curls with flavors such as chicken or beef or even seafood i(f you are very skillful) by using various broths and seasonings. But my experience is that a mushroom is not as easy to endow with flavors that can take it far from its mushroom roots. But frying them up like this and using that yummy sauce could turn a supposed mushroom-hater into someone who can appreciate this nutritious ingredient. My husband has been asking for scallion pancakes, so I think I will stuff them with this mixture - a double flavor bomb for the win. Do appreciate the hook in the title that might bring in folks, especially for the first time.

Yeah exactly...Lets face what exactly... hahaha Cook any animal meat without seasoning, without oil and guess what, it's going to have a very plain taste, the tastes people are familiar with ARE 100% the seasonings and sauces food is cooked in. Its why Pumpkin spiced food always tastes like pumpkin pie even though they dont have any pumpkin in them, it's the spice people know. And if you are disappointed with the food, it's the RECIPES YOU are trying, sorry. Call it whatever you want, I REALLY dont care. But to me this has a very duck like tastes and duck pancakes feeling. IF you are in the mood for duck pancakes this will suffice very much, if you are in the mood for a mushroom type pancake, then go get some basic button cap mushrooms as they are going to be the ones people are most familiar with the mushroom tastes. Mushrooms dont all have a "mushroom" taste, there are well over 2000 different varieties of edible mushrooms, some of them have a pork like taste, some crab, and some lobster.. I made Kentucky fried chicken of the woods mushrooms and gave it to a chicken loving friend who said they wouldn't have known the difference.

Yeah, again with the hyperboles it's a bit tiring. I get the whole sensational title for KZread but doing that is not a service you're doing for yourself. This looks like mushrooms, this is not close to some duck meat and I don't see how your sauce brought the taste closer to duck. It don't even need to taste it, Monica just said it directly.
