New England Clam Chowder | Instant Pot Recipe

Enjoy a delicious bowl of thick and hearty New England Clam Chowder, made in the Instant Pot (or other pressure cookers). A great recipe for a cold evening. Here's the recipe!
This is a super recipe with lots of clams, potatoes and rich flavor, all made in the IP. Great on a crispy autumn day or a cold winter night.

RECIPE FOR NEW ENGLAND CLAM CHOWDER
An Instant Pot (pressure cooker) recipe
**I did make some adjustments to the recipe and I’ve included those changes here which may be different that seen in the video.)
3 - 6.5 oz cans Chopped Clams - Reserve the clam juice
Small bottle clam juice
3 slices bacon, chopped
1 1/2 Tbsp butter
1 Onion, diced
2 stalks Celery, diced
2 Tbsp white wine
1/4 tsp dried thyme
1 clove garlic, pressed or finely minced
1/4 tsp kosher salt or to taste
1/2 tsp Pepper
4 cups diced red or Yukon gold potatoes, unpeeled (I used Yukons)
1 1/3 cups Half and Half
1 ½ Tbsp corn starch w/ ½ cup milk (optional, for thickening)
Instructions
Open the cans of clams and drain the clam juice. With the bottled juice, it should equal about 2 cups total liquid. You can add water if needed to make the 2 cups.
Turn on the IP's Sauté function. Heat the pot. Add the chopped bacon. Cook, stirring occasionally, until fat has rendered out of it, but not crispy.

Add the butter, onion, and celery. Cook, stirring and scraping the bottom of the pot to get up all of the brown bits, until the onion starts turning translucent. Deglaze the pot with the white wine.
Add the salt, and pepper. Cook for 1 minute, stirring frequently.
Add the potatoes, and clam juice. Add the garlic and thyme. Stir to combine.
Put the lid on the pot and lock in place. Turn the steam release knob to the Sealing position.
Cancel the Sauté function
Set to Manual. Time to 3 minutes (High Pressure). When cook time has ended, let the pot rest for three minutes, then do a Quick Release.
When the pin in the lid has dropped down, carefully open the lid, facing away from you, and stir the contents.
Turn the Manual setting back on. Add the clams and the half and half. Let the chowder heat through.
If you want a thick chowder, add the ½ cup milk and corn starch slurry. Be sure to let the chowder simmer for only 2-3 minutes. Then turn the pot back on “Keep Warm” until ready to serve. Delish!
Note: After consideration by both the Director and myself, we decided that smashing up some of the potatoes is a mistake and don’t recommend it. I’m also conflicted as to cooking for 2 or 3 minutes to ensure the potatoes don’t get too mushy. I'm leaning toward the 2 minutes.

    It's a great recipe. I think you could pull it off with fat-free half/half to cut down (way down) on the calories. I like the headband too. Makes it look more "real".

    This is a great recepie, in the UK I could not get clams so I added 1 piece of skinned hake raw with some fish sauce I increased the water to 2 cups, and in place of clams I added at the end cooked prawns, mussels, squid and scallops. It was lovely

    This is a FAB recipe and hope you'll try it. Don't give it 4 minutes if you use a pressure cooker....next time I make it, I'll be giving it just 2 minutes. Moe's has become a huge disappointment. We've not been in there for years. Way too bad.

    Here it is Oct. 20, 20 and I had some canned Clam Chowder for lunch, very little substance. So I sat down with KZread and found you. Love your video, I think you cook like I do (in fact when you started to deglaze the pot I was thinking use the wine before you did) and I have bought an IP but not used it much since I had knee replacement on one knee and waiting for the next to be done so standing for long periods it difficult. This recipe looks so great, I had a favorite place in ME that served the best clam chowder. I'll send my husband to get the ingredients tomorrow. I love your voice so gentle and sincere and you're fun to watch. Will be checking out more videos. Thank you.

    Totally agree about the change in Moe's Chowder. Mine is so much better than theirs, but hasn't reached the same quality as the chowder served in the old Mo's in Newport back in the 60s. This recipe is an excellent one. Thanks Jill, and Director.

    Looks good. I don’t have an instapot, but would still make it. In soups that have potato as an ingredient, I thicken the soup with mashed potato flakes. It’s the only time I use the flakes. It will thicken without detracting from the flavors. A trick my mom taught me and I still use.

    Just made this recipe! Best clam chowder ive had, no kidding! Your recipe said 4 mins in the description you said 2 mins so i went in the middle with 3 mins and it was PERFECT.

    Is it the best or what!? I had made notations in the recipe about timing. While I gave it four (way too much in my opinion) next time I will give it 2 and see what happens. Usually when I make soups, I let the soup stay on warm for an hour or so until we're ready to eat it. I figure even if the potatoes are a big under done, this warm function should finish them off just right.

    You look so cute, Jill!! Laughed at the Director continuing his oratory while you were flailing about from the hot chowder!! LOL I always loved Moe's chowder but have to agree that it's more like potato chowder! ha Also wondered where "Happy as a clam" came from so googled it. The original full phrase is "Happy as a clam in high water". Clams can only be "harvested/dug up" during low tide - so when the tide is high, they are less likely to be captured, cooked and eaten.     Hi Jean Hendry the real full phrase is " Happy as a clam at high tide " that is how we know it hear in the pacific north west, 50 miles north of Seattle WA, But Jean its all good were ever you all are from, its a really nice phrase no matter how some one says it, and Jean have a very nice Clam Dig at low tide

    Turns out I did Instant Pot clam chowder yesterday, someone else's recipe, but very, very similar to yours. Vegetables: I included a thinly sliced leek, as well as corn kernels from two small ears of corn. After the vegetables were done with the saute (about 5 minutes) I added about 1/3 cup of flour, stirred until everything was coated, and let it cook about 1 minute, stirring. As the flour started to catch, I began adding clam juice. I had the juice from 2, 10oz cans of clams, plus 1 bottle of clam juice, and I prepared clam stock from Better than Bullion Clam base. (1 heaping TBS in 2 cups of filtered water. After the vegetable mass looked more like soup I added the diced potatoes (I used Idahos), and pressure cooked 5 minutes, followed by 1 minute before I did the instant release. The potatoes were slightly overcook, but still held their form and didn't go mushy. I think 4 minutes would be better for next time. After cooking, returned to saute function, added the clams, plus a heavy sprinkle of Old Bay seasoning (completely to taste) and possibly ¼ tsp of Zatarain's liquid crab boil. When ready, in went 1 cup of heavy cream, and absolute perfection. And it was even better today. Take away: flour in the vegetables should eliminate the need for corn starch, fresh corn works perfectly well with the recipe, 4 minute of pressure plus instant release, and a touch of spice at the end.     They used to but we think it's gone downhill since they became so well-known and popular. Wouldn't seem right for them to do it but that's how we've seen the soup's taste and quality go down.

    Hi, I made this recipe before and it is so delicious. I am making it again as one of our sides for New Years Eve but I have a problem. One of our guests does not eat pork. Is there a substitute that I can use for the bacon? Thank you and happy New Years !

    Obviously there's no substitute for bacon but you can get a smokey flavor that resembles bacon with a liquid smoke. I'd say use 1/4 teaspoon as a starter and add as you see needed. Good luck!
