NATIVE JOLLOF RICE & PEPPERED BEEF

Native Jollof rice and peppered beef.
For the beef: Boil with:
* 2kg beef
* 1 small onion
* 1 knorr beef seasoning
* 1 teaspoon salt
* Few sprigs thyme
* 1 cup water
* 2 Bell peppers
* Scotch bonnet pepper( as much as you can handle
* 1 small onion
* 1 tablespoon dried parsley
* 1/4 cup oil
For the rice:
* Pepper mix: 3 bell peppers, scotch bonnet pepper, onion(rough blend)
* 1/2 cup Palm oil
* 1/4 cup chopped onion
* 1/4 cup iru
* 1/2 cup dried prawns
* 1/2 cup bonga fish (deboned)
* 1/2 cup whole crayfish
* 1 teaspoon each of crushed been seasoning, crushed chicken seasoning
* 2 teaspoon salt
* 3 1/2 cups washed riced(golden Sella basmati rice or any rice of your choice)
* 1 cup meat stock
* 2 cup water
* Basil leaves(optional)

    I did not know about Irú, and had to Google it. In Togo, it is called Afinti. Irú or Eware (Edo) is a type of fermented and processed locust beans (parkia biglobosa) used as a condiment in cooking. Similar to ogiri and douchi, it is very popular among the Yoruba & Edo people of Nigeria. It is used in cooking traditional soups like egusi, okro, ewedu and ogbono soups. [Wikipedia]

    This recipe is 🔥!! I didn't use iru and I substituted the bonga fish with smoked ... this is the best native jollof rice I have cooked ... big ups Kiki !

    Have you ever tried this with olive oil or regular oil instead of palm oil? I once tried this, but the smell of palm oil bothers me soooo much. If it's not garden egg sauce, I don't want to smell or taste palm oil 😬

    Actually, it's a Nigerian dish also. The iru (little black seeds) is optional. And you could go for any dried or smoked fish.

    Jollof rice is originally a Senegalese dish. Nigerian and Ghanians also prepare this dish using different ingredients. This particular style of preparation with palm oil, basil, roasted prawn, crayfish, herring fish, and fermented locust beans is called local palm oil rice in Nigeria.

    How do you make sure that the basmati rice does not become too mushy and over cooked when you put it in the tomato sauce? It seems basmati cooks faster than parboiled
