I did not know about Irú, and had to Google it. In Togo, it is called Afinti. Irú or Eware (Edo) is a type of fermented and processed locust beans (parkia biglobosa) used as a condiment in cooking. Similar to ogiri and douchi, it is very popular among the Yoruba & Edo people of Nigeria. It is used in cooking traditional soups like egusi, okro, ewedu and ogbono soups. [Wikipedia]

Why did you cover it with foil while cooking? Is there a particular reason for that?

What brand of rice do you use

Pls was the rice first parboiled?
Cook for 20 minutes on low or high heat...?

Is the beef really soft ?
Kikifoodies - I noticed you didn’t add Tomatoes to THIS Jollof recipe as opposed to ALL of your other Jollof videos! Any particular reason you chose to omit tomatoes? Do you have family & friends who don’t include tomatoes in their Jollof? This presentation is so vibrant & beautiful! 💜

Have you ever tried this with olive oil or regular oil instead of palm oil? I once tried this, but the smell of palm oil bothers me soooo much. If it's not garden egg sauce, I don't want to smell or taste palm oil 😬

Actually, it's a Nigerian dish also. The iru (little black seeds) is optional. And you could go for any dried or smoked fish.

Jollof rice is originally a Senegalese dish. Nigerian and Ghanians also prepare this dish using different ingredients. This particular style of preparation with palm oil, basil, roasted prawn, crayfish, herring fish, and fermented locust beans is called local palm oil rice in Nigeria.
Please can I use scent leaf and the meat c I use goat meat
What is Iru?
Is that a stove or what?
Looks yummy 😋
Parsley😊
How do you make sure that the basmati rice does not become too mushy and over cooked when you put it in the tomato sauce? It seems basmati cooks faster than parboiled
