Myeolchi bokkeum (멸치볶음), stir-fried anchovies, two ways - mild and spicy!
Sweet, savory, sticky and crunchy anchovies! Myeolchi bokkeum (stir-fried dried anchovies) is a staple side dish in Korea. This recipe shows two ways to prepare myulchi bokkeum - mild and spicy!

►Ingredients:
3 ounces (1 cup packed) small size myeolchi (dried anchovies)
1 tablespoon cooking oil
3 plump garlic cloves (or more)
2 green chili peppers - optional
Sweet and Savory:
1/2 tablespoon soy sauce
2 tablespoons rice wine or mirin
2 teaspoons sugar (or less to taste)
1 tablespoon Oligo syrup or corn syrup (or honey - use less)
1 teaspoon sesame oil
1 teaspoon sesame seeds
Sweet and Spicy:
1/2 tablespoon gochujang (Korean red chili pepper paste)
1 teaspoon gochugaru (Korean red chili pepper flakes) - optional
2 tablespoons rice wine (mirim or mirin)
2 teaspoons sugar (or less to taste)
1 tablespoon oligo syrup, rice syrup, or corn syrup (or honey - use less)
1 teaspoon sesame oil
1 teaspoon sesame seeds

Finally I found this recipe. I had a Korean roommate and his mom would send him this from Korea. He sent me some one time but then we lost touch as he dropped off social media. 😢 Anyhow, I crave the spicy one and now I can make it 😊

Thank you for your video! Loved it! Also, I have a question if you could please answer. I've been to many korean restaurants and often time they serve this SUPER delicious side dish. It looks like it's a glazed melon with brown glaze.. Do you by chance know the name of it? When I bite down on it, the texture is like a potato but it looks like it might be a melon or maybe a squash? Because it has a green skin on the outside but it looks brown inside. It tastes like amazing. Thank you if you can answer.

It sounds like steamed danhobak (kabocha squash) glazed with a honey sauce. Was it orange brown?

If you have access to fresh anchovies, sure! But I've never done it.
Can I use glucose instead of corn syrup?

Yes you can. It just will not make it as sticky as how this dish usually is.
I feel like garlic is the key to keep the fishy smell out. But I do have a question, does the "fish" bigger, more crispy?

Possible, but not always. It will greatly depend on how they are dried, preserved, and cooked.
Is there a version of this recipe that’s not sweet ?

This is a sweet, sticky and savory dish, and the sweetener makes it sticky and lightly binds the dried anchovies together. You can simply reduce or omit the sugar.
