    WOW that was packed full of information! ❤️ Just hung some kefir earlier today for some cheese. Yum! I make and sell raw goat milk kefir. In fact just 2 hours ago I had a knock at my door. There stood a woman who apparently I had gifted some kefir grains to awhile back. She was thanking me profusely, saying that she loves her kefir and that I had saved her life. 😳 I am smart enough not to take the credit but to thank her back equally as enthusiastically for sharing her story. I guess the day she was at my home to pick up her grains I had given her a sample to drink. She said that her stomach had been in terrible pain for 2 years, and with in 10 minutes of her drive home she said her pain was gone and she could feel it working. I am often, lovingly mocked by my grown children saying whenever someone has an ailment that I can be seen or heard whispering the word “Kefir!” 🤣 I so appreciate when people share their stories. Thank you for sharing this information for others who don’t know yet about kefir. 😊

    In the same way, you make curd cheese from sour milk (let it stay till it goes thick). Curd is universal stuff, use it as bread spread (with herbs, salt, pepper), or for dinner with boiled potatoes(some onions, a bit of linseed oil), baking a real cheesecake. You can even add some fruits and eat curd as a sweet dessert. Great source of protein. Greetings from Germany.

    We love our kefir too! Just a few notes. We were making two cups a day and we were finding that we just had too much volume when flipping it every day so we just cut down to 1/2 cup a day. It has made it manageable for the two of us. When I get too many grains happening I either give them away or freeze them with a bit of dried milk powder. When you need them just thaw in fresh milk and they bounce back in a few days. I am surprised more people don't make kefir - so easy and delicious.

    Thanks for reminding me to make Kefir Cheese. Did you know that making kefir with thick cream (double cream here in the UK) makes everything taste a lot sweeter. I set up a litre use half then keep topping up with 3 day kefir whole milk ferments - nicer for beginner to get used to the flavour.

    After having my mind somewhat blown, you got my subscription!! I said to my husband "honey we can make cheese with the kefir grains"....his reply? Gouda? Swiss? LOL. You are a fascinating lady!!! I just started making our own Kefir a few months ago and the grains just keep growing so I have jars of them in the fridge not knowing anyone to share with.     This is excellent content! I was just watching another video recently of a lady talking about how the Kiefer helps fight off any candida overgrowth, and can also help regulate your oxalate levels! Wowza! Keep it coming! Love it!

    I prepare fruits (some may need cooking for half hour.) and culture in a container all night with some live yogurt or kombucha. In the morning it’s breakfast.
